Looking for a recipe for a cutout cookie that is like a shortbread. I had one from a local bakery here in Portland - Grand Central Bakery - and it was wonderful. It was at Christmas time and they cut them in star shapes and had icing on them. Anyone have a recipe like this?

I know there are plenty of good shortbread recipes out there but I use a sour cream recipe for cut out cookies that makes them soft to chew but strong. They taste nice and rich too. Let me know if that would suffice.

Do you have Barefoot Contessa cookbooks? She has a GREAT shortbread recipe. I'll send it soon...
Barefoot Contessa is my very favorite cook - I highly recommend her books and show on Food Network.

Sour Cream cookies

Cream:
1/2 c. shortning
1c. sugar
1 egg
1/2 t. vanilla

Add;

1/2 c. sour cream

Sift and add a little at a time:

2&1/2 c. flour
1 t. baking powder
1/2 t. baking soda
1/4 t. salt

Chill. Roll out 1/8" thick/ Bake @ 350 for 5-6 min.


I also found a recipe for shortbread cookies in my "Cristina's of Sun Valley" cook book

1/2 pound butter, softened
2 c. flour
1/2 c. powdered sugar
1/4 t. salt

Preheat oven to 350. Combine all ingredients in a mixing bowl and mix until a dough is formed. Roll until 1/8 " thick and cut into desired shapes. Bake on parchement paper for 8-10m minutes or until light brown around the edges.

Thanks, these sound great. Hopefully this weekend I will have time to bake, might be painted the spare bedroom if my husband gets done with sanding the wood trim - we'll see.

In the Across The Fence Forum under " recipes we love to share" Eileen posted a shortbread recipe that is very rich and oh so delicious! I have used it several times and have not been disappointed! Happy Cooking!Remember shortbread and lace cookies are best made on a clear day with low humidity.

Bramble is right. It is wonderful and I have used it for cut out cookies often. great with a pretty icing on it.

Thank you all for the info and recipes. I am now very excited to try them all. I have fall cutout shapes that I have never used (bought two years ago and forgot about them) Leaves, acorns, etc. I thought it would be great to do the shortbread type cookie and frost them in fall colors.
