Hey gals, I actually have a reporter coming to my house tomorrow for lunch to talk about our new Farmgirl Chapter, the Snoqualmie Valley Farmgirls! Wow! What do you think? I want to treat her to some great Farmgirl fare, but I also am home with the kiddos all morning, so it can't be too time consuming either. Ideas? Recipes? Help!

PS I don't have any budget mix or a good pan for a bakeover, otherwise that would be a slam dunk!

When I have gal pals over for lunch, I always serve a nice salad - mixed salad greens with herbs, chopped apple, dried cranberries, walnuts and grilled chicken on top. Oh and maybe a little feta cheese.

How about some sort of "fancy" but easy tea sandwiches...foo foo chi chi but yummy and easy....

I like grape tomatoes, feta cheese, red onion tossed in a vinagrette.

What about a nice hearty soup that you could put in the crock pot and be done with? Like Clam Chowder or Potato Soup? Maybe serve it in Bread Bowls?

I like to do nice chicken or crab salad sandwiches on croissants. (add something extra to the salad like chopped cashews or water chestnuts for crunch) a couple pretty pickles or veggies on the side and some homemade lemonade or like that and you are all set.

I'm with Jenny--I make a warm chicken salad that has currants and pecans,cheese,mayo,onion and celery (and some other stuff I can't remember) and Oh boy--you just bake it till it's warmed through. I'm hungry for it now! Like Jenny, I put it on croissants, or another type of lighter bread.

I served that for a bridal brunch and it was a hit--easy, carefree and yummy. Get some really good bibb lettuce for your samiches, too :)

Surely...it came from the Southern Sideboards cookbook from Jackson, MS....I was clothes shopping last night (ugh!) and didn't see your post until this am. I'll get it right when I get home :)

Debra, here is the chicken salad recipe:

Hot Chicken Salad

2 cups croutons, toasted
2-1/2 cups diced, cooked chicken
1 cups of diced celery
1-1/2 cups grated sharp cheddar cheese
1/4 cup pecan pieces, chopped and toasted
2 tablespoons minced onion
dried currants, cherries or golden raisins to taste
3/4 cup mayonnaise
1/2 teaspoon salt
1 tablespoon fresh lemon juice

Combine half of the croutons with all the remaining ingredients. Turn into baking dish and cover with remaining croutons. Bake at 350-degrees for 35 minutes. May be prepared ahead, but if so, do not put croutons in until baking time.

Great for a luncheon or light supper with a congealed or fruit salad and rolls
Serves 6.

Can you tell it's from the south? Congealed salads...so very bridgeclub :)
