We're getting ready for another blast of winter here, so I was in the mood for some real "comfort food" today and got out a Paula Deen cookbook this morning and made rice pudding with raisins. Can't wait to have it for dessert tonight. It's my first time making this, too!
What do you others make for comfort food in the winter?

Homemade mac and cheese- with extra cheese of course!!!
Hot white chocolate cocoa with whipped cream!!
Enchiladas with chips and extra chunky salsa!!

paula Dean, good choice. Sometimes during the winter, we put mostly coconut milk instead of water when we make white rice.

Hearty Wild Rice Cheese Soup
1 C wild rice (or 2 C frozen) (I use a box of Uncle Ben's Original because the seasonings just totally enhance the soup) 1 lg onion, chopped fine 1/2 lb bacon, cooked and crumbled 2 cans cream of potato soup 1 qt 1/2 & 1/2 1 lb Velveeta cheese, cut into cubes
Cook rice as directed or thaw frozen rice. (I usually cook bacon, then the onion, then use the recipe directions) In a large saucepan, combine all ingredients and cook over low heat, stirring often, until dish is hot and cheese is completely melted. Serve with crusty bread and salad. Serves 12 Nutrition value per serving: 399 cal, 18.5 g protein, 17 g carbo, 27 g fat, 75 mg chole., 1231 mg sodium, 1 g dietary fiber

All sounds sooooo goood.. I am low carbing- I have 100 plus pounds to lose.. so I will be having taco meat (more like a chili) topped with cheese, onions and sour cream.. that will hit the spot for warmness. My comfort food isn't a food but a drink- tea. I make a cup of vanilla tea or chocolate tea and add creamer- real cream.. yum

Have you ever heard of pastines? It's a kind of pasta, very tiny balls or stars like what you would put in soup. You cook it until the water is almost all absorbed, and stir in an egg white. Eat it hot with butter and salt. A favorite Saturday morning breakfast when I was little.
When I buy this at the store, the box says pastini (or ancini de pepe works too) but my mom always called it pastines (rhymes with saltines). I assume she got it from my Italian great-grandmother. Does anyone else cook this or is it weird?
I don't care if it is weird, I think I'm going to have some tomorrow morning. |

Speaking of comfort food, I just made a big pot of potato dumpling soup for dinner. I love hearty soups and stews for dinner on a cold Midwestern night! Add some rustic bread and double chocolate chunk cookies & you know what we're having for dinner at my house tonight!

Robin- what kinda curry. I ate curry at least twice a week when I was prego. I liked Thai yellow with chicken and tofu, masaman, and any indian food I could get my hands on. It's my ultimate comfort food. I think I know whats for dinner.

I almost forgot my favorite comforts food growing up----one was macaroni and milk....the pastines post made me think of it. I haven't had it in AGES!
My mom always made it for me when I came in from sled riding, or if I'd had a bad day at school or whatever. I know now, that they were really poor growing up and that's what my gran made for them a lot to eat.
Basically, you boil elbow macaroni the regular old way, then heat a small pan of milk with butter and salt and pepper and put em' together. MAN is it warming and satisfying.
The other was Hamburger Splits. It's a hamburger on a bun, whole thing cut in half with a dollop of mash potatoes in the center and the whole thing covered in warmed beef gravy. Not smothered, just covered :)

I adore Paula Dean! She's just got this joy about her and I love watching her show. My favorite comfort food would be something in the pasta line, either cheesy or tomato saucy. My husband makes a great Thai coconut milk chicken soup for me when I'm not feeling well. That is very comforting too.
