Just curious what everybody else is busy canning, I did my famous "everything" relish today, so far 36 1/2 pints. I never have enough cucumbers to make pickles so I take what I have and add all the vegies I can find and make sweet relish enough for all. I love to can |

Wish I had something to go with my blackberries, but syrup sounds awesome, never made any,,,,,,,,,,do you can in bottles or jars?
I have 4 peach trees that are the "indian peach" don't know if that is the correct name, but the peach is just the ugliest thing, kinda brownish/green,,,and the fruit is magnificent red,I my try syrup from those |

Your Indian peach sounds facinating Arlene. Peach syrup..yum! I jarred 68 lbs of tomatoes tonite, this aft did 14 jars of sliced peaches and a dozen jars of peach/orange marmalade. Tomorrow...more blackberries & strawberries into the freezer. Still need to do relish, but think I might try the green tomato variety. I don't want anymore ripe ones...lol

I am putting up a few small jars of pickled beets tonight..yum! I like em spicy!!! I am so ready for the tomatoes to get ripe here!! Should be in the next week..I just have been getting cherry tomatoes so far..lots, but they go fast with me and the kids on them!! Lot of peppers though!!

It is so fun to talk to people who are canning, most of my friends just look at me like I have lost it.We live very close to the ocean and don't usually get really hot weather this early, but this year we had a month of 90+ We have a whopping garden. I would love the recipe for spicy pickled beets!! |

I love canning! I've been making chokecherry syrup this week. I think I might have picked just about all that is out there. I'd like to do a little more though. I'm going to make some zucchini relish too. I'm hoping to get enough cukes to make some dills. Indian peach sounds interesting!

I love canning too. ON the agenda for late tonight and all day tomorrow is more applesauce, bread & butter pickles and sandwich relish.
I've already done beet pickles, pickled spice crabapples and lots of applesauce.

I canned some green beans last week...hasnt been a very good year due to the drought...I have lots of yellow peppers...Anyone know how to make yellow pepper rings like you buy in the store? I would guess they are pickled but I'm not sure....Suggestions? Jan |

I have three bushels of beans, two bushels of beets, broccoli, cauliflower and tomatoes that need to be tended to. Some of it is going to friends but the rest will go in jars or the freezer.

Going to do a test batch of grapes tonight...they are still a little tart but thought it might add a nice tang to the jelly. I can't wait for these to ripen!! I also have Muscat and Concord but those ripen later in September.

I grew baby corn this year as an experiment. Didn't work great, but.... anyway, anybody have any recipes For pickling them? I've had them that way on salad bars before and love 'em! Tomato sauce and juice coming up this weekend!

Just did dill pickles, and pickled beets, and yellow plum jam. Tues night I shredded 17 1/2 lbs of cabbage to turn into saurkraut. Never have done that before. Hope it works. Next is zucchini relish. Meadowlark, When I was growing up my Mom would pick our grapes, wash them put them in a quart jar, add a cup of sugar, fill it with hot water and then seal the jar. 6 weeks later we had grape juice. MMMMMMMM!

Arlene, I do the elderberry syrup a few ways: I have frozen it and I have canned it in pint jars. I have also given it away in pretty "syrup" bottles but just refridgerated it. It will last a long time that way before it begins to ferment.Not really sure how to seal those bottles, so I sterilize them and fill with the syrup that I just boiled. We use it mostly for medicinal purposes, but it is delicious over ice cream or in sparkling water. Picking elderberries off the stems is one of our farmgirl chapter projects!! It is very tedious and slow going to do it alone.

36 jars of green beans yesterday along with freezing a ton of zucchini and blackberries, anybody have a good recipe for refrigerator pickles? After I finished the relish,(26 1/2 pints) I found a whole bunch of cucumbers under a few squash in a bucket, not enough for anything else. |

I just got this recipe this summer and found it to the best one Ive tried. Finally one that everybody likes!Enjoy! Crispy Refrigerator Pickles 2 quart jars 1 Tb chopped fresh dill 1 Tb salt 4-5 med or 6-8 sm cukes 1 tsp mustard seeds 4 garlic cloves crushed 6 peppercorns 1 cup vinegar 2 1/2 cups water Cut cukes into long spears. Put in a bowl, sprinkle with salt and dill. Mix until coated. Let sit 1/2 hour. Place salted cukes into jars. Divide and add pepper, mustard, and garlic. In a big measuring cup measure vinegar and water and add mixture to jars. Screw on lids and shake to mix. Put in the fridge and eat the next day. Last up to two weeks but they will be gone in a few days!Guaranteed!!

Thanks Sue! You read my mind actually! I was thinking of making some frige pickles today! I crave pickles all the time, EXCEPT when I was pregnant and it was baked beans I craved. Go figure? These look yummy!!!!

I am so envious of everyone canning! My housemate and I are eagerly awaiting the tomatoes to ripen so we can can them!
BlueEggBabe: that pickle recipe is a lifesaver! I have lots of cucumbers and I was needing a pickle recipe. Will this work on larger more mature cucumbers? Would I need to remove the seeds? Thanks for getting me out of a pickle!

I don't see why it wouldnt work on older cukes. Personally, I would scrape out all those big seeds and just use the firm part. I might even cut the spears into chunks if they were too long for the quart jar. They are tasty!

I love canning, just started last year but my sister has been canning for some time now. I have canned cranberry sauce and apple sauce and I am hoping to do some baked beans and jams soon. I would love to try some relishes, would anyone like to share some recipes?? Cathy |

Finally got my zucchini relish done, Made a double batch this year. Next on the agenda is blueberry syrup. Thursday will be blackberry picking day,this batch will be for the freezer for pie come winter. Can't wait. Has anybody ever canned soup before?

I can soup each year..especially right after Thanksgiving..turkey vegetable. I usually can some plain vegetable and some chicken broth with diced chicken in it too. Just use the time for the thing in the soup that has the longest time...usually the meat. It is so nice to open a quart of soup when you need a quick meal..or take a jar of soup and a loaf of fresh bread to a sick friend in a basket...handy!! Sure wish I had blackberries!! yum!!

My daughter made dilled garlic beans today...her first attempt at canning and she did a great job. She was quite pleased with herself. She's a great kid! I'll send you some blackberries Jenny...packed inside a pumpkin. lol
