I am canning hot pepper jelly this afternoon...we have lots of peppers! It is so good poured over cream cheese and then served with crackers..yum!! Or to dip egg rolls or wontons in....or tortilla chips too...I think I will make two batches..I like to can it up in little 4 oz jars.

Boy, did I hit the jackpot at work today! My co-worker is a great cook and he's making salsa and spaghetti sauce. He told me today, bring him jars and he'll make some of each for me too! It does't get any easier than that! KarenP

Thanks Jenny! I am the only soup eater in the family so thought It would be nice to have some pints of soup in the pantry, so I don't have to make a big pot only to freeze most of it. Can't wait for a cold day,hot soup and crusty bread smothered in butter!

THAT sounds wonderful!!! It was just cool enough this evening that I am thinking of soup days!!! I think I will make a big pot of bean soup and corn bread on the first chilly day!!! Enough to can some up too.

Oh Yum! I will join you in spirit. I love both of those. I should clarify, My family will eat soup, only broccoli cheese and Chicken Noodle, but only if I use great g'ma's noodles. Anything else they only scowl. So I will make veggie soup just for me. Would I add beans, barley and such when I can it or when I am ready to eat it?

you can add the beans either way..havn't tried canning it with barley..boy that sure sounds good though. If you do it be sure to let me know how it turns out.

I would love to have the recipe for zuchinni relish if anyone would be willing to share! Do you use it like regular relish?

Here is my Zuke Relish recipe 10 cups zuke (I remove the seeds) 4 cups onions, 1 red pepper.Grate or grind. Put in a large bowl,add 3 tablespoons salt,cover with water and soak overnight. In the morning pour off liquid and rinse with cold water and drain.Put in large pot add 2 1/2 cups cider vinegar,3 cups sugar, 1/2 tablespoons dry mustared seed,1 tablespoon table mustard, 1/2 tablespoon black pepper, 2 teaspoon celery seed, 1 teasspoon grated nutmeg. Bring to boil and reduse heat to med and cook for 30 min. Fill jars and seal. I use it as youwould any realish. My Husband likes it as a condiment with meat. Enjoy! Julia

MMMMM Julia, I didn't have a garden this year and my kitchen is a shambles but I'm saving your zuchinni relish recipe in high hopes that next year this time I will be putting up a whole lot of this!! It sounds wonderful and makes me hungry.

Today I canned cabbage patch soup and Rose geranium Jelly. OOO the jelly is so good! Yummy on shortbread cookies.

Can you make jam/preserves and can it later? I have a batch of plums that need to have something done with them NOW, but as I am trying canning again after an 11 year hiatus I do not have jars or any other equipment on hand.
Also, does anyone can homemade stock? I started making my own stock this past winter and I love it. I have frozen it, but I would love to find chicken on sale and just make enough to last a year. I know I will probably need a pressure canner for this.

Go ahead and get your plums washed, crushed and measured and then save them. I wouldn't go ahead with all the rest until you are ready to actually can it. I have even frozen batch size amounts of crushed apricots or whatever fruit and canned them like a month later. It works fine. I have canned homemade stock. It turns out wonderful and is sure handy to have on hand. Yes, you would for sure need a pressure canner for that.

Well, I went to the bookstore and ordered a couple of books on canning. I also went to the grocery store and got everything I need for water bath canning, but I forgot the lemons! Rats. When my books come in I will read up and get started with the stock canning as soon as I find a great price on chicken. Thanks for the tip Jenny. I'm going to go ahead and use it since I forgot the lemon juice.

I got some applesauce made today. I didn't think that would happen this year with the lack of bees and therefore apples. A friend has several apple trees and some bloomed later, after all the rain here and three of her trees are loaded. I got 8 quarts today and may be able to get some more from her. The apples had beautiful red skins so my sauce is pretty pink, and oh so good!

I'm SO excited. I just finished my first batch of plum preserves from my own plum tree. They're delicious, I just had some of the leftovers that wouldn't fill a jar. My jars are sitting on the counter with the lids popping now.
I just have one question. How do you all keep from burning your hands over and over? My fingertips are really sore now from dripping the hot preserves while filling the jars and trying to handle the jars and hot lids to get them closed up. Am I missing some tools?

I just hold mine with a washcloth or dishcloth when I screw on the bands. I do sort of have asbestos hands after being a waitress for alot of years though. I sit them on a dishtowell and usually have the washcloth nearby to grab them with. The rings don't have to be hot..you know that, right? My sister made jam one time and kept the rings hot too. Just the lids and jars need to be hot. I use a ladle and a canning funnel. I get dripped (spit on actually) more when the jelly is boiling and that hurts!! Congratulations on your first jam. We go through alot of plum jam here. It makes a great addition to homemade barbque sauce too..escpecially with chicken..yum!!!

I love the ping of my seals! I made some yellow plum jam, and it is yummy. As for the jar lifter, yes it is out there. You should be able to find it in the canning section of your local hardware (ACE), or wal-mart, or the like. They are handy. Tip - don't try ot use your tongs. I tried before I had my handy tool and was really sorry. Hope you find one for the sake of your fingers!

I kept the lids in the hot water until it was time to put them on the jars (my rings weren't hot). It was getting the lids out of the hot water and placing them on the jars that I had a hard time with. I guess I didn't prepare enough ahead of time. I didn't have enough towels handy and I didn't have enough counter space cleared, so I was juggling hot jars. I do that a lot, get excited about a task and don't take the time to get all my ducks in a row before starting. When I do the grape jam I'll prepare better and see how it goes. If I keep burning myself I guess I'll just have to build up some asbestos hands too!
Thanks Jenny and Julia , I'll look for a funnel and jar lifter before my next batch too.

There is a great tool for your lids. It is a rack with a long handle. You set the lids upright one in each slot and put the rack in your pan of hot water. When you need a lid, you lift it out by the handle and get your lid. It is nifty. I got mine at Bi-mart.

I’ve been canning berries and cherries yesterday and today. Jam and sauces. Last year I canned a lot of sweet ox heart cherries and haven’t use them much so I am looking for a cherry cobbler recipe. Also does anyone have any recipes for sweet cherries other than jam, jelly, and preserves? I would love a relish or vinegar, or something sweet and spicy or sour. Just a thought, with all the great recipes I have seen here today I figured you would have a some.
