Shoyu chicken... 5 lb. chicken thighs 1 and 1/2 cups soy sauce (I use kikoman) 1 cup sugar 1 cup water 4 cloves fresh garlic..minced or pressed 1 tbsp minced fresh gingerroot mix up all the sauce ingredients and bring to a boil in large pot add the chicken and let simmer for about an hour and 1/2, turning the chicken over from time to time to coat..keep lid on it...and that is it..wonderful smell, and taste and goes great with rice and a nice cool salad...my family loves this. YOu can do it with breasts instead of thighs but it isn't as good..something about the thighs makes it just right..only time I purposely buy thighs. They are on sale alot so it is a frugal supper for sure. I hope you like it.

Hi all! I've got some canning questions. The only canning I've done is the boiling water method for chutneys and applesauce, things like that. I've never tried the pressure method. Do you have to have special equipment or just a large pressure cooker? I would really like to can things like tomatoes and spaghetti sauce with meat, etc., but I'm afraid to try it. I made Jenny's salsa a couple of weeks ago, and it was great - but I froze it instead of trying to can it. Can you guys help me over my fear? Marlene |

Marlene there is a thread about pressure cookers in here (kitchen) page 2, you will find alot of answers I was scared of mine the first few times also lol

It must be a pressure canner. Pressure cookers and pressure canners are two different things.

for tomatoes and salsa you don't need a pressure cooker to can ...just the water bath method. I agree..pressure cookers and canners are different...never used a pressure cooker..although I have one that was a gift to me years ago...but couldn't live without the canner! You can do it...if I can you can!!! It may be a good idea to try to see if there is anyone you can borrow a pressure canner from (a newish one with the manual) the first time..that is what I did a zillion years ago...and then you will see how to use it safely without the investment. My mom always canned with a presser canner, so I just did the same, never thought about it. Guess that is a good way to learn. I just make sure I stay in the kitchen watching the gauge(read a book or look through the ball or Kerr book for new ideas) lol because the pressure gauge can vary up or down. so im usually playing with the heat. Besides that, you can get doing something else and forget about the canner. My mom used to make this chicken and can it, It was always so good. but she didnt do it to often, but we raised our own fryers so had lots of chickens.She would brown the chicken in the skillet, then pack it in the jars and can it. I will have to ask her if she did anything else to it, like seasoning . shirley in oly |
