I am baking my first batch of bread right now, with the four starters hanging out on the bar. I don't really have anyone to give them to (that I can think of), so we measured the batter left in the bowl (what eventually became the bread)- it was two cups- and I could use two of the starters and make two more loaves (and have two left). Here's my question: can I make those two extra loaves into the 10-day cycle, say, before I add the ingredients next time, or do they have to be baked today?

You can start the process all over again with those 2 starters if you wish. ( If I know I'm not able to bake all my "starters" I freeze them without any problems.
Which reminds me, I need to thaw some for Christmas presents! I better get baking.

Anothe question... I forgot to add my stuff yesterday. I did it today, will that be okay? Also, I put two startes in the freezer. What do I do with them when I get them out? |

The starter is very forgiving, you really can't mess it up. It will be fine.
When I take my starters out of the freezer, I let them thaw & rest on the counter for 1 full day. Then start my process the next day as Day 1.
