I found a sweet potato in my basement this fall that had sprouts. Jokingly my mom said to put it in a jar of water. lol So I did. I don't think my sweet potato knows what time of year it is. Although it is still in the high 80s/low 90s here. I guess I will try making a cold frame with some straw bales and plant it to see what happens.

Blessings....

Wow! Maybe you can put it in a window indoors and make a houseplant out of it!

I thought about that Alee, I'm going to have a growing light in my basement this winter. But since it is a vine plant I didn't know how much room it would need. This is going to be all experimental. lol

You could always trim off the vining parts to keep it small until spring and planting time :D

My mother in law always "plants" a sweet potato in a jar in her window. She hung a tension curtain rod for the vine to wrap around. When it gets too big she cuts it down and starts over.

So to keep it as a houseplant all winter I just leave it in a jar or water or do I put it in a pot with dirt?
