Mock Berry Jam w/ Ripe Tomatoes

4c ripe tomatoes
3c sugar
1Tbsp Lemon juice
6oz strawberry gelatin

Put tomatoes in blender then in a saucepan with sugar and lemon juice. Boil 15 mins. Add gelatin. Boil 5 minutes, pour into hot jars. Process in boiling water canner for 10 mins.

Mock Berry Jam w/ Green Tomatoes

3c ground green tomatoes
2c sugar
6oz raspberry or blueberry gelatin

Boil ingredients for 20 mins. Pour into hot jars, Process in boiling water canner for 10 mins

Cristine, what a great idea! Does it taste like a salsa or relish, or does it really taste like jam ? I suppose it would be good on toast or English Muffins, either way!

What recipes have you used it with?

I haven't used it, but I think when I was little I had it. It doesn't taste like tomatoes. The tomatoes absorb the gelatin flavorings. i just have an abundance of old cookbooks, and came across it when someone was asking about what to do with all the tomoatos

Thank you so much for the recipes. I'm going to give both of them a try. They sound great and so far, everything "mock" recipe I have tried has been wonderful.
