2 cups chopped zucchini about (3) medium
1 cup chopped onion about (1) medium
1/2 cup chopped sweet green pepper about (1) small
1/2 cup chopped sweet red pepper about (1) small
2 T.salt
1 3/4 cups sugar
1 cup cider vinegar
2 t. celery seed
1 t. mustard seed

combine zucchini,onion,green&red peppers;sprinkle with salt;and cover with cold water. Let stand 2 hours. Drain vegetables ;press out liquid. Combine remaining ingredients;bring to a boil. Add vegetables;simmer 10 minutes. Pour hot into hot jar,leaving 1/4 -inch headspace.Adjust caps,process 10 minutes in boiling water bath.
Yield about 4 half pints.

I made this relish a few weeks ago and it is awsome! I have never had zuchhini relish before and now I am inlove with it. I will be making more this weekend.
