mmmm- Strawberry Syrup! That sounds really yummy!!!

Michelle- You sealed some jelly with the parafin wax- how long is it okay to keep jelly shelf stable with the parafin wax method?

Hey all you Blackberry pickers...I told Alee I would give her this recipe I found becuase it entails....blackberries. Then I thought I would just post it here, since we're all doin' about the same thing!
I found this on a local blackberry farm website (Kentucky Proud).
Beef Tenderloin with Blackberry Port Wine

1 large shallot, diced
1 cup fresh or frozen blackberries, divided
2 cups port wine
1 tsp sugar
2 cupbs beef stock
1 tbsp butter, softened.

In saucepan, bring shallot, 3/4 cup blackberries, wine and sugar to boil. Boil gently to reduce wine to 1/2 cup. Strain and set liquid aside. Boil beef stock in separate pan to reduce by half, about 15 mins. Grill or pan broil steaks in skillet 3-4 mins per side (or however you like em')
Whisk blackberry port wine reduction into reduced beef stock. If sauce is too thin, ad a bit of flour or corn starch dissolved in water. Bring to boil. Whisk in butter at the end. Serve steaks with sauce and garnish with remaining blackberries.

Serve with garlic/horseradish mashed potatoes.

Actually I thought it worked out wonderfully! Doug loves it! And I was just thinking of maybe canning with the parafin wax instead of doing the vacuum seal.

Michelle and I met up at about 8am in Pullman, and we picked for a few hours and left as it was really starting to get hot. If you would like to go still, we could meet in the early morning and pick and then either go swimming in the river or go to town for ice cream :) I will be going on Saturday with my downstairs neighbors no matter what :)

Maybe I will pack a little bit of a picnic lunch. I will make sure to freeze lots of water bottles so we can have cold water all morning. I have a nice little collapseable cooler that I can bring. How about a cold noodle salad, some vinegar coleslaw and we can wash some of the berries in cold water so we can have berries too! If we drive to the down river side of the dam (about 10-15 minute drive) it looked like there was a swimming hole that was in the shade or we can swim at Granite point which has easy access to the water for both people who want to jump (a 10-15 foot jump) and those who want to ease it. The water there should be cold enough to cool us off but not so cold as to be TOO cold. Granite point can be a little busy on Saturdays but people usually like to go to the bigger jump or we can go to one of the many other places in the area that have good swimming. :)

Oh and it looks like the temp will be below 100 degrees! I did a www.weather.com search for Uniontown, WA because I think that is the closest town. It says it should be around 96 degrees on Saturday and closer to 87 on Sunday- Would it be easier to go on Sunday?

So we are meeting in Pullman on Sunday at the Train Depot Vistor information Center at lets say 8am? We'll hurry out to the berry patch and pick lots of berries and then scadaddle back to Air Conditioning before it gets too hot? Sound good?

Woo hoo! I put up 7 jelly jars of "Backyard Blackberry Jam" yesterday AND it didn't come out like a hockey puck!

Now, what to do with 7 jars of blackberry jam!?

Wow Jonni! How great is that! Now you won't have to buy store bought jam any more! Yum! A I can just imagine a wonderful breakfast of hot toast right out of the toaster- a goodly amount of butter and homemade backberry jam! mmmm mmm!

Hi farmgirls, I make all of my jams/jellies. My daughter will eat nothing else on peanut butter but homemade blackberry jam and it HAS to have the seeds in it. I usually make a couple batches (using store brand pectin Kroger brand works as good as Ball's). Then I can the rest of the berries. Easy to do. I can't remember to time for water bath, but I'll find it and post it if any one wants it. The reason I can them is that throughout the year, I can use them to make clobber, pies, cakes, and of course more jam when I need it. When I can it I use both pints and quarts that way I can open the size/amout I need. If I remember right you can them the same as you would tomatoes.
