Well done, Tara.
Today I am trying something I have never done before, canning two different items at one time, that process for the same time. I wanted to can grass fed beef stew meat that was on sale at Aldi but I only got one pound instead of 6 lbs I ordered. Sale started on Wed but I didn't order till Fri so I got what was left. To be able to can the two pints of beef stew meat I will do 5 pints of pink dried beans. Not what I wanted to do today but there will be other sales and I will have to be faster ordering next time.

All 7 pints sealed. I learned a lot trying to figure out how I was going to can two completely different things. Once I knew what I was going to do the canning went smoothly.

Way to go Sara and Tara. Good to fill up the canner. I spent the morning trying to reorganize some of my kitchen cupboards. I moved things around, to make them more convenient to use. Will see, as now I have to remember where things got put. I also spent alot of time cleaning up a broken wine glass...... fun. I should do a few more today and finish the job.

Yesterday I processed the rest of the potato crop. I made frozen hashbrowns, and canned up 5 quarts of cut up potatoes. All sealed, so I am celebrating that!! Got a bag of potatoes saved to plant this spring, and a drawer full in the refrigerator. Glad I got them taken care of before they sprouted more and went soft.

Michelle, great job taking care of the last of your potato crop. Happy your jars sealed.
Today my sister is picking up a whole pork loin that's on sale for $1.29 lb. We will half the loin & price. Betty will make hobo dinners out of her half, and I plan to put mine up tomorrow. Should have enough for 7 pints.

Put up 7 pints pork loin today and happy to report they all sealed. Now back to dried beans next week.

Lisa, it's about to bust. I have two shelves in my kitchen pantry for my canned beans and four shelves in the little closet in my bedroom for beans and whatever else I put up. So I have to keep my canned goods rotating, in & out. Good thing canning is one of my hobbies. lol

Yesterday I got my canning going. Made maraschino cherries, and canned in jelly jars, and a half a batch of better then bushs baked beans in pint jars. All sealed. I make an ice cream recipe with the cherries and will try to beans and see how they taste. None of it was hard, just made for a lot of dishes.

Yes, raw packed and added boiling water. The pork loin was lean with little fat so I knew it would not make any broth. Instead of adding 1/2 tsp salt I put 1 tsp instant chicken bouillon to each pint.

The beans look good in the jar, but I have not tasted them yet. Will pop open a jar soon and let you all know. Great job on canning pork Sara. How will you use it? I have not tried canning pork, just beef and chicken.

Michelle, for years my oldest sister has talked about how her late MIL would fry her home canned pork loin like porkchops and how good it was so I wanted to try it. I opened one jar, but I sliced the pork loin too thin, so it all fell about. It was tender and I browned it. It was very good so next time I will do thicker slices. I still want to try frying it. I plan on using the pork loin for stews, with beans, and Bar B Q sandwiches.

I'm curious about the bakes beans too! That sounds like something I need to put on my list for this year. Your hashbrowns sound good too - I tried your frozen french fries and plan to make a lot more this year. They were fantastic!!!

Popped open a jar of the baked beans. They looked great and had a nice sauce texture but the flavor was lacking alot. I used a recipe off the internet. I would make again but I would try the baked bean recipe in The Canning Divas cookbook. We will doctor these jars up when we eat them.

Put up 7 pints of carrots today and they all sealed. One of the things I like about home canning is that I get to customize the recipes. For the carrots I bought 4 lbs of organic carrots that were different sizes and shapes. Some of the carrots had skinny ends that I called whole mini carrots, and I put them in one jar with a fresh bay leaf and sprig of rosemary. The largest carrot tops I sliced and got one jar with a fresh bay leaf and sprig of rosemary. The other 5 jars have chunks of carrots with sprigs of rosemary in two of the jars.
