I love canned carrots, but I have never put rosemary or bay in with them. I'm going to have to try that!

Heather, the next time you can carrots do a test run and add a sprig of rosemary to one or two jars to see how you like it.

This morning, I put up 7 pints black eyed peas and one jar did not seal. Instead of adding 1/2 tsp salt to each jar I added 1 tsp instant chicken bouillon.

Today I put up 7 pints grass fed beef stew meat and all sealed. Aldi had the stew meat on sale for $5.79. Who would have thought that humble stew meat would cost that much on sale. Regular stew meat is now $10 or more.

Prepping today to can tomorrow. I washed a box of regular mouth Ball lids and low & behold there were 13 lids in the box. That's never has happened before, so I guess 13 can sometimes be a lucky number.

Sara, always exciting to get a bit of extra!
I am going to try a recipe that I saw on Rebel Canners, cranberry orange juice. I have 4 bags of cranberries and some oranges, all purchased on the cheap.
For each quart:
1 1/2 cup cranberries
3 orange or apple slices
1/4 cup sugar
Hot water
To warm jars add hot water, and sugar. Dissolve sugar and add the fruits. Add hot water to 1/2 inch headspace, and WB for 25 minutes. Says to wait 4-6 months before using. Also says it is good with vodka! Not a vodka drinker but I might try it out!

Lisa, your cranberry orange juice sounds interesting. Let us know how it turns out.

Canned 7 pints of okra and tomatoes today and they all sealed. Easy to do since I used frozen cut okra and store canned stewed tomatoes. The hard part was determining how much to buy.

Lisa the cranberry juice sounds interesting with the added apple or oranges. I can it just with cranberries.
Sara way to go with all your jars sealing. Very satisfying.
My ma is visiting her sister in AZ. Yesterday I got a box of lemons and oranges from my aunts back yard trees. I am so excited. I plan on freezing zest or maybe drying it?? Not sure what to do there. I wanted to can the lemon juice, but in researching, some say canning changes the lemon taste??
Anyone does this? I thought about making lemonade concentrate and wondering if anyone has done that? I am going to go up to my ma's house and borrow her electric juicer.

Michelle -- I freeze lemon juice and have never noticed a change in flavor. I freeze it in ice cube trays; just take out what you need.

Thanks Judith. Freezing would be easier for sure. I did get them all juiced, but then we had company and was not able to finish. Today I will try canning some to see how it turns out and freeze some. I did freeze a bunch of zest in small amounts.

Got that lemon juice all done. I froze two ice cube trays. I canned 3 jelly jars of just lemon juice, and I canned 4 pints and 1 jelly jar of lemonade concentrate. All sealed, phew. And I froze lemon zest. It sure was nice to have all those lemons.

I don't know how it was made - my mother in law bought some canned lemonade concentrate at the farmers market a few years ago. She just added some water and for fun some lemon slices in each cup but they weren't needed for the taste. It was delicious. Maybe the added sugar made a difference versus canning just juice??? I'm interested to see what your results are. I need to be getting the canner out and getting all the black berries made into something. It won't be long before the steer goes to the butcher so they need to get out of the freezer. Probably some stew meat to can as well. But first I have to get this sap all boiled! Maple trees went crazy the last couple days!!!!

The lemonade concentrate I canned was almost one cup juice to one cup sugar. My cups of sugar were not full though. Heat it up to about 190 and water bath, for 15 min. Canned beef and chicken is wonderfully tender and good. I have recipes for making pepperoni, and summer sausage from hamburger, if you would like to try. They do take tender quick for a cure. But we really like them and a way to use hamburger and have your own sausage and pizza toppings. You cook them in your oven.

I have been on a month-long break from MJF so I could get somethings done around here like repairs to the outside of my house and it painted. Also a little of this and that inside and outside that needed a little TLC.

Tara a gift of potatoes is always a blessing.

Today I canned 7 pints of beef stew and all jars sealed. I bought sirloin steak for 3.99 lb for the beef stew. At the sale price it was 1/2 the cost of regular stew meat. I like to use steaks in my canning when I can find them on sale because they are easier for me to cut up.

always nice to find a good bargain on meet. I was also blessed with 15 pounds of cabbage. I found a recipe for sausage-potato-cabbage soup. I'm going to make a lot of freezer slaw.

We have canned up one batch of maple syrup so far, got 2 gallons. We have enough for another round of cooking. Today it should run good too. We will be having prefect temps for sap running.

Raining today with high humidity so it's a good day to can with the A/C on. Put up 7 pints of "Good Mother Stallard" beans and they all sealed. The bean was probably bred in Virginia and got its name in the 1930s. Rest of its history is lost in time.
