I am looking at a recipe to can marinated mushrooms. Have any of you canned mushrooms? I got to get back to putting up my dried beans but I do like doing something different now & then.

I can't help you out Sara, sorry. Would be something to learn though. My husband likes mushrooms on pizza. Me, I don't haha.

I put up 5 half pints of marinated mushrooms today and all sealed. The recipe called for button mushrooms, but baby porta Bellas were on sale, so I used them. Also added a wee sprig of fresh rosemary to each jar. Would I do it again? I'll wait and see whether I like them or not.

Sara, did you add any oil or just the vinegar base? I was thinking about that and thought you could just add the olive oil after the jar was opened.

Lisa, it called for 1 cup olive oil, 1 1/4 cup white wine vinegar, 1 1/2 tsp dried basil & oregano, and 1/2 tsp red pepper flakes. 3 lbs button mushrooms. Water bath can for 20 min.

Step one was to boil the mushrooms with water to cover and 1/2 cup bottled lemon juice for 5 minutes; drain; put in jars; and add the brine with herbs.

A note to beginner canners. Bottled lemon juice has acidity of 5% which is good for canning. Fresh lemon juice does not.

They sound delicious! Let me know how they taste. I'm assuming you will need to wait a while before sampling.
I like that they aren't sweetened. SO many of the store-bought jarred ones are sweet, which is ICK to me

Lisa, if I do it again, I will use white mushrooms. The baby Bellas made it dark and hard to see the mushrooms. If I am going to go to all the work & expense to can, I want my jars to be sealed and pretty.

I'm a little late posting but this year I canned plum preserves. I always do tomatoes and when I have time I try something new. This year it was the plum preserves and I can't believe how much we like it.

Put up 7 pints cranberry beans and one did not seal. Used all Ball jars, lids, & rings and still had one to fail.

I took a nap and on waking I found the jar had sealed. That hasn't happened in years.

Good job Nancy and Sara. Sometimes those lids can be a little slow in deciding what to do. haha. My canner has been on a break lately. I should get going on that turkey soup one of these days.

Good job on the beef broth; turkey broth here from the leftover Thanksgiving bird. 10 pints, and they all sealed, in spite of using 3 different types of lids

Everyone is getting all pings, that is happiness. I had three fails on turkey soup that I had canned. The leftover broth did all seal, so not sure what I did wrong. But it happens. I need to remember to slow down, I think.

Michelle, good job canning turkey soup & broth.

I know that one of my problems with jars not sealing is that there are times my hands & wrist weaken as I tightened the lids so as I go along some lids that I think are tight are not. In the coming year I will have to pay more attention to tightening lids.

Canning Eye of the Goat beans tomorrow.

Today I put up 7 pints Eye of the Goat dried beans and they all sealed. As my hands tired, I paid special attention to the last three jars to make sure I tightened the lids just right.

Had broth and beans left over so I added collard greens and black eye peas from New Years Day to make a soup. Very tasty. Had a serving for lunch, enough for supper and to freeze one serving.

Yummo! I love collards and beans. Perfect for a chilly night.
I am still working on dehydrating all of the squash and pumpkin I got from the Amish at the end of the season. Pumpkin dust. I mainly use it to sprinkle on the Dobes food, but it is delish in yogurt, and if I have an inkling to make a pie, I can rehydrate for that too.
