We made one last pick of blackberries on Saturday. Ended up with 7 more lbs so we are set for the winter with those. Starting to get some canned goods in store.

I thought some of you might like Apple cake as much as I do and I found this recipe.

If you would like a brown sugar glaze to add over this delicious apple cake, try this easy recipe. You will need:
1 Stick butter
1 Cup brown sugar
2 Tablespoons milk
3/4 Cup powdered sugar, sifted

In a saucepan, over medium heat, while stirring add butter and brown sugar and cook until it dissolves. Add in powdered sugar and milk and stir until well combined and melted into glaze.
Immediately pour glaze over cake and serve warm.

Edit: The cinnamon measurement was left off the recipe. You should add about 1 teaspoon to the cake batter, if desired.

Just been looking for something different. I always heard this done with bags of chips, hence, walking tacos. Not sure why this is called that unless you use it to top your chips with.

Walking Tacos
Ingredients :
– 2 pounds Ground Beef
– 3 large Onion, chopped
– 1 can Green Chilies, small can
– 1 can Enchilada Sauce
– 2 ounces Cream CheeseIngredients
– 1 bag Fritos Corn Chips
– 1 bag Shredded Cheese
– 4 cup Lettuce, shredded
– 2 cup Tomato, fresh, diced
– 16 ounces Salsa
– 8 ounces Sour Cream Directions :

1. Brown ground beef with onion.

2. Add green chilies, enchilada sauce and cream cheese.

3. In a 9×13 pan, repeat layers as follows: Fritos chips Meat Mixture Shredded Cheese.

4. Bake at 350 for 15-20 minutes or until cheese is bubbly.

5. Top individual servings with lettuce, tomatoes, salsa, sour cream as desired.

My Mama's Favorite Recipes
·
FRIED CINNAMON APPLE RINGS

4 large apples (I used gala)
1 cup flour
¼ teaspoon baking powder
2 tablespoons sugar
¼ teaspoon salt
#8539; teaspoon cinnamon
1 large egg, beaten
1 cup buttermilk
vegetable oil for frying
for the cinnamon sugar topping
#8531; cup sugar
2 teaspoons cinnamon

Instructions:
- In a large bowl, combine the flour, baking powder, sugar, salt and #8539; teaspoon cinnamon. Set aside.
- In a small bowl combine the egg and buttermilk.
- In a third dish, make your cinnamon-sugar topping by combining the #8531; cup sugar and 2 teaspoons cinnamon. Set that aside too.
- Next, slice the apples into ¼-inch thick slices, and use circle biscuit cutters in graduated sizes to make rings out of each slice. Discard the center circles containing the apple core.
- Heat the oil in a frying pan over medium heat to 350°F.
- Combine the contents of the first and second dishes as the oil warms up. This will be your batter.
- Dip the apple rings in and out of the batter one at a time, removing any dripping excess by tapping the rings against the side of the bowl.
- Fry the rings in small batches, turning them to ensure browning on both sides.
- Once the rings are golden and crispy, transfer them to a plate lined with paper towel for a few seconds.
- Quickly transfer the apple rings, one by one, into the cinnamon-sugar mixture and coat evenly.
- Transfer to a wire rack and serve warm.

Notes: Apples can go a long way in the recipe, so if you don't get to all 4 apples, don't worry. Make as much or as little as you like.

My kids used to call that Frito boats, where you put the chili over the chips. We used to have that as dinner at our mystery quilt nights.

Linda -- that sure sounds good but it's definitely not keto! (or diabetic)

I'm trying to empty out my fridge before I leave for PEI. Made a mushroom soup yesterday because I needed to use the celery. I just think it's funny that I by $9.00 worth of mushrooms to use up $3.00 of celery! lol I have soup that I can freeze. I still have celery left but I'll cut that up and take it on the road as snack.

Aside from that, nothing is going on in the kitchen at the moment. Once my Roma tomatoes ripen, the kitchen will be busy.

Check out these new paper sandwich bags I found in the store today. Are they adorable of what??!



They are recyclable , freezer safe, food safe, and have a place up top to pull off a sticky tab and seal the bag. They are a generous sandwich size and they came in quart size as well. I just had to have a box! Apples never looked so cute!

Thank you for letting us know about this. I have been looking for a good alternative for sandwich bags; it seems I use them for everything except sandwiches. I have been trying to de-plasticize as plastics have become such a concern for our planet. I've been trying to remember what all we used when I was a child and we didn't have all this plastic stuff.

Was able to find those bags. Not local,had to order online.

Thanks for posting Linda. I'm sure some of the newer girls have not seen that chart. I know Connie used to post it around the time of the Apple Festival. Can't wait to go picking and drying some apples for winter. As well as making applesauce and apple butter. I don't add sugar to either of those the apples are so good and sweet!

This chart definitely has all the favorite apples that most people can find. I am always interested in the apples that don't make it to the stores everywhere. It is their stories and uses that fascinate me the most.
