Delicious Karen! I didn't get a picture, I forgot. Thank you for sharing the recipe!
Yesterday morning we went and picked 8 lbs of blackberries. Froze all but enough to make blackberries and dumplings. I haven't found mom's recipe yet so I'm guessing it was one of those she had memorized. I have made them before so I probably just guessed at it which isn't to hard. It is so yummy. I remember picking blackberries for days during the summers when we were kids. As fast as we could pick them she would make them into jam, pies, turnovers and cobbler and froze lots as well as everything but the jam. She did so much canning and preparing for those long, cold NY winters. We lived in the Adirondack area is got quite cold. She would make blackberries and dumplings for a treat some evenings. We would put ice cream on which defeated the purpose of having them hot but it was so good!

Ummm, I stepped on the scale this morning and 3 pounds have showed up unwanted!! Looks like my kitchen activity will be dialed back to more low calorie meals and no desserts!

Denise just make a Blackberry Cobbler! They are the best! And as I told my daughter in law...you won't get fat! Just remember you are just having it as your dessert. So all of that butter and sugar, are just to make it delicious...yum.

I don't have the recipe for the dumplings. I just sort of wing it. Mom's always came out much lighter than mine. She just put a few cups of blackberries in a 2qt pot with whatever she thought was enough sugar and some water and lemon juice. No real measurements. She did many recipes from memory and would just say "put in what looks like enough or just to add a little flavor" i don't know how she did it but everything always came out great. Probably years of practice.

I've been looking around online to find a recipe. Betty Crocker has one but it is for the slower cooker.

That's how my mother cooked, too - by pinches, handfuls, and other by-guess-and-by-gosh measurements. LOL! Especially her sweet kraut recipe - mine never turns out the same, even though she did give it to me in actual measurements. LOL!

I have another box of peaches coming in Friday to split with my daughter. I need to get some freezer meals made up before the freezer gets full of fruit. There really isn't to much more to come in except apples. Those will get made into applesauce, apple butter and pies for the freezer. I'd like to find a way to store for later use in baked goods. I don't like to can because I don't like using the sugar syrups.

Has anyone ever used a vacuum sealer? Is there one that does jars or is that an attachment for the one the does the bags or whatever it uses? Any recommendations would be greatly welcome.

I had one a long time ago. It mainly did plastic bags. I don't know about one for jars.

We have one for plastic bags. The only way I know to vacuum seal jars is a pressure cooker or water bath canner.
