Ok, so I'm a day early. In my house St. Pat's is a pretty big deal. Not only is it a holiday favorite, but my second son's birthday is the day after. So we have celebration on top of celebration! Every year I make corned beef and cabbage (which is actually Irish-American), soda bread with raisins and currants, Irish Whiskey trifle, and rainbow cookies. I don't know what ever possessed me to start making these rainbow cookies, but if I had it to do over, I probably would've skipped that one! They are the most involved cookie I've ever made. I'm sure you all have done harder things, but this one is just time consuming. I am committed though. It's come to the point where every time I invite family and friends to Connor's birthday party they always want to make sure the rainbow cookies will be there! Last night I was up until midnight making the dough and dying it. They do look pretty awesome when they're done. I'll post a picture after I bake them.

Do any of you have St. Patrick's Day traditions or special plans this year?

We don't usually celebrate St. Patrick's Day at home. Our church, St. Patrick's, usually has a celebration of some sort. My daughter was just talking the other day about these cookies that we used to be able to get at the Safeway bakery when the kids were small...I'm wondering if they are like the rainbow cookies that you're making! They were almost like a shortbread and were made to look like watermelon slices...the dough was colored and shaped and I'm sure labor intensive! They were really good and we haven't seen them for years. Even though they're a lot of work, what wonderful memories you're making for your family!!! I know they appreciate you!

This was last year's lunch and school lesson. I haven't made plans for tomorrow. I will likely make rainbow cupcakes and green bread again.

For breakfast we have a spinach quiche shaped like a shamrock and dinner is something Irish... this year it will be Irish Shepherds Pie and Soda Bread. We will also read about the true story of St Patrick.

Nice shirt Bridge! :) Well, we kind of broke with tradition this year and had St. Patrick's Day yesterday! Friday there was too much going on. I had to make a choice between staying home and cooking, or taking the kids to an indoor playground for a couple hours. We all needed to get out of the house so I chose the playground. Last night we had our Irish fare, and it was wonderful! I took a picture of the cookies, but it's on my ipad and I'm on the laptop now, so I'll post it in a bit.

Erin, those look delicious! Talk about labor intensive...but definitely worth it, I'm sure! My grandson would LOVE these!
