i found one and it looks sooooo good, I will have to try it. you can use it with clams as well and lots of butter. yum!

I found a great Mince Meat recipe to put in jars. And it has no meat. Sounds delicious.

Mincemeat III
Recipe By: Linda Correia "This meatless recipe won 2nd prize at the county fair for pie filling. I like to use apricot or peach brandy in this recipe."
Ingredients 2 pounds cranberries 1 quart water 9 apples - peeled, cored and ground 2 pounds raisins 3 (16 ounce) cans gooseberries 3 (16 ounce) cans pitted sour red pie cherries 2 cups brandy 2 tablespoons lemon zest 2 tablespoons orange zest 2 cups distilled white vinegar 4 cups white sugar 1 tablespoon ground cloves 1 tablespoon ground nutmeg 2 tablespoons ground cinnamon 2 tablespoons ground allspice

Directions: Preheat oven to 350 degrees F (175 degrees C). Place cranberries in a large saucepan and pour water over them. Simmer on low heat until cranberries begin to split. Remove from heat and pour into a large ovenproof baking dish. To cranberries add apples, raisins, gooseberries, cherries, brandy, lemon rind, orange rind, vinegar, sugar, cloves, nutmeg, cinnamon, and allspice. Stir this mixture thoroughly and cover dish. Place dish in preheated oven. Heat for 30 minutes, stirring occasionally. Sterilize enough canning jars and lids to fit all mincemeat. Place a wire rack in the bottom of a large stock pot and fill halfway with water. Bring water to a rolling boil. Pack mincemeat into sterilized jars, ensuring that there are no spaces or air bubbles. Fill jars all the way to the top and screw on lids. Carefully lower jars into boiling water using a holder. Make sure jars have at least 2 inches of space between them. Pour more boiling water over jars if necessary, so that they are covered by 2 inches of water. Cover pot and process for 30 minutes. Carefully li#58176;#56430; jars out of water using a holder, and place on a wooden or cloth-covered surface, at least 2 inches apart. Allow to cool, then check seal by pressing on jar lid. A properly sealed lid will not move up or down at all. Mincemeat should be aged for 2 or 3 months before using.

Thanks Linda, I always wondered how it was made! My dad made it when I was little, not my favorite and then he took pie crust dough and wrapped it up in that. It was different.

I have my grandma's recipe but it calls for meat and suet. Yuk! Thanks for posting a meatless one. Wonder if you can substitute something for the gooseberries? Can't get those.

Denise - I'm sure another berry would substitute fine.
Darlene - I would never eat it when I was young because I thought it had meat in it.

Many of the recipes I found had meat, but I really liked the sound of this one. I think it would be good in a pie or on ice cream or as a condiment for some other things. I really want to try it, but probably after Christmas. LOL!

Here is a much simpler mincemeat recipe.
Zest a large orange and a small lemon.
Trim most of the pithy white from the fruits then cut up and remove seeds.
Quarter and remove seeds from 3# tart apples, Granny Smith??
Chop all fruit in the food processor
Put fruits in a Dutch oven or slow cooker with 1 1/2 cups Apple cider. Cook for 15 minutes, uncovered.
Add 3 cups packed brown sugar, and the following things:
1 1/2 t. Salt
1 1/2 t. cinnamon
1 1/2 t. Nutmeg
1 1/2 t. Cloves
Zest of your orange and lemon
Cook until it thickens.
This could take 20 minutes to an hour on stove top, or several hours in a crock pot.
This recipe will make two large pies or three smaller pies.
Bake fresh mincemeat in a pie crust for 30 minutes at 425°.
If you freeze the remainder, it will not become a rock. When you are ready to use it, simply place in the shell, press down carefully. Add the top crust, if using one, and bake at 425° for 40-45 minutes. You may want to cover the crust for the last ten to 15 minutes.
No liquor in this one.
My mother once got a hogs head and made the real deal. I was not a fan. But I loved mincemeat as a child. It was one of many things I gave up when I married into a pumpkin pie and pecan pie family. I am using this recipe and making mincemeat pie this year.

Speedy recovery to you, Carole.

I woke up this morning to no water and a backhoe from the Water Company in my back pasture. A water line break on their side (luckily) from the freezing temp lately. Fixed now, but have to run water through the pipes to get rid of the bubbles

Carole, what an awful time to be sick. Please feel better fast!
I have had a bacterial infection in my lungs for a month. I'm on my third round of antibiotics. I am slowly getting better. Christmas comes whether we are ready or not. Lol. Take care.
