Tonight spinach stuffed salmon with kale and brown rice! Yummy!

I've had way to much Mexican this week. On Thursday, my evening group had a Cinqo de Mayo feast. I had DH make a batch of enchiladas, so Mexican on Wednesday and Thursday ... left over guacamole on Saturday and Nachos on Sunday .... Funny how I don't Mexed out while in Texas. It must be the margaritas! lol Catch you later!

I spent some time last week making meals for the freezer. Makes life easier when we have family coming. My dd and her family are coming for a week in May/June so I know we will be busy and this will make it much easier to enjoy not having to wonder what we are having. I still have more ideas to come up with but at least I have the majority of days covered.

Tonight we had homemade burritos, with a Mexican style coleslaw. Made a large batch so I can freeze some for later.

Not sure what I will be doing for dinner tonight. DH (the usual cook) has an event so it's a "Free for all" tonight. I'm actually thinking of either cooking or going out to dinner "girls night out" with Pumpkin! Hum ....

Denise, I have admired the bags of foods, frozen, ready for the crock pot, that you see on Pinterest. I hope things go smoothly and I can get some put away before school starts again. It certainly would help, like you said.

Here is the recipe for Pan Bread that my Grandma Lena and my Mom Betty used.

Heat 6 tbsp. shortening, oil, bacon fat, etc. in a 10" cast iron skillet (use olive or organic canola oil and I don't use all 6 tbsp. 2 tbsp. is enough)

In a bowl mix together

3 cups flour, (I use organic unbleached flour)
2 tsp. salt or to your taste
2 tbsp. sugar
4 tsp. baking powder

Stir in 2 cups of milk till blended and pour into hot skillet over medium low to medium heat. Spread the batter if not quite to the edges of the skillet. Cover and cook about 8 to 10 minutes. Turn over and continue to cook another 7 to 10 minutes. Cut into serving size pieces and serve warm.

For our diets, I leave out most of the salt and all the sugar.

all-purpose flour and wheat flour also work well.

This bread will have a nice thick crunchy crust. Watch carefully or the crust will burn in the middle of the pan. If it does burn, I just cut that part off. The rest is still good and taste great.

I have found it is easier to turn and get it cooked all the way in the middle by cooking the batter in 2 batches instead of 1. It isn't as thick, but does cook more evenly. I'm sure my Grandma may have done this on a wood stove or a gas stove. Gas or our wood cook stove is what I use and it works well. You may have to adjust the heat on an electric stove.

Hope you try this recipe. My family likes it with soups.

We are picking a ton of red raspberries. Due to our great weather our crop is fantastic! They are so delicious we just eat them without sugar. Can't wait to make scones.

My brother and his wife are coming down this weekend. And, tonight, my SIL will be doing the cooking, which mean we'll be enjoy an authentic Cuban dinner! Yummy .... the last time she cooked it was all gobbled up! I so enjoy authentic cuisine! I'm sure to an outsider our dinner table must seem strange with English, French and Spanish being spoken! lol A potpourri of culture!

Tonight we are headed to my sister-in-law for supper, she is making taco soup. I'm taking dessert, I found this receipt on Pinterest and gave it a try and it turned out wonderful. No Bake Coconut Pecan Praline Cookies. If anyone is interested I'll post the receipt or mail you one. The are really more like a soft praline.

Sherry, please email me that recipe. Have you tried Strawberry Sigh? Shortbread type crust, filling made of cream cheese and cool whip, etc.,strawberry jello with lots of frozen strawberries, this is in layers topped off with whipped cream. You only bake the crust for 10 minutes. I always have to look on line when I want to make it. It is cold, yum and refreshing for summer.

With our garden bounty, not much cooking has been going on ... but lots of eating of fresh vegetables in the form of salads has been going on! Oh so yummy! There's nothing like a fresh tomato right off the vine!

I grocery shopped this morning so today through Sat I will be cooking both for eating now and freezing.

Today I made a dozen mini chorizo and potato burritos for the freezer and two for me today. I hadn't planned on doing burritos but I found 9oz chorizo in the marked-down bin for 79cents so I bought two. Small white corn tortillas were on special so it was just too good of a deal to pass up. The mini burritos will be for breakfast and lunches.

Tomorrow it will be meatloaf which I will freeze in serving size portions. Angus ground chuck was on sale. Also whole chicken was on sale for 69cents lb so I will be roasting it with veg. It will be used in several different dishes for the freezer and broth.

Sat I will finish up with small chuck pot roast w/ baby portabella mushrooms. Will have it for Sat lunch and Sun dinner; freeze the rest.

When you cook for one it takes a little work and a whole lot of planning.
