tonight is turkey, mashed potatoes and gravy, baked corn, cranberry sauce, and deviled eggs, with pumpkin pie for dessert :D The kids want the tree (that I JUST took down) up ;)

Shannon, nothing makes Miss Hadlee happier than Thanksgiving dinner for her birthday on August 23rd. Then again mid October too. She will eat leftovers until they are gone or until we grind the left over turkey and make Turkey salad, which my son LOVES!

Made some scalloped potatoes to go with a roast today. Hadn't made them in years. Was pleasantly surprised at how nice and creamy they came out. No leftovers so they must have been okay.

We had a pot roast today. I deviled some eggs. I accidentally discovered that putting a diced potato or two and a chunk of butter in with the eggs, as they boil, helps me peel fresh eggs once they are boiled. I fried a bit of okra, made cornbread, chocolate cake and stuffed jalapeno peppers. Thankfully they had some heat today, not super hot, but just right.Oh, and a big pot of red beans.(pinto beans). My son said it was a feast. That's because he loves red beans and stuffed peppers.

Marilyn, I will have to try boiling eggs that way! I had heard that baking them in a muffin pan did the same thing, but have not tried that!
Our granddaughter, her hubby and a friend were here for the weekend and we had a baking marathon :)! Blueberry Scones, Apple Fritter Bread, Poteca, Chocolate cookies, with mini marshmallows in the middle of them, Baked Apple Pancake. Gave most of the leftovers away :)!
Hope everyone is keeping warm and are safe! Our other granddaughter is in Anchorage AK, they had a very large earthquake there, she said their house was swaying! Very scary!!!

That earthquake sounded scary. My uncle's home in Palm Desert California is five miles from the fault line, they can see it from the kitchen window. My cousin says they have little shakes all the time. The sand is like a cushion.

Ruth, when I make potato salad in the summer, I boil my eggs with the potatoes and a chunk of butter to keep it from boiling over. I don't ever have eggs that have been in the fridge for 45 days (store bought), and had all but given up on having deviled eggs, which my family loves. I have read that eggs last for months if refrigerated, or buried in sand, ???? I just know that eggs from the store will usually peel. We also have some Banty eggs which make great deviled eggs.

All this discussion of potato salad makes me want some! We're having "barbecue wings" tonight. I put that in quotes because since we're vegetarias they're not actually wings, but short, skinny shaped veggie patties, and they're baked in the oven with barbecue sauce, not actually on the grill. We'll have mac and cheese with broccoli, cauliflower and carrots, and celery sticks. I have a sweet onion ranch dressing for dipping the "wings" and celery. Should be good!

Eggs can be kept in a crock filled with salt too! My grandmother kept them that way and when we run out of room in the extra refrigerator(the one we got to store the eggs) when the girls really start laying I have stored them just in a bowl on the counter. They will keep quite a while as long as they are not washed. We sell some of them so I haven't run into that problem in a while. We were just talking this morning about putting our sign back out because we are getting kind of crowded in the fridge. I rotate mine so I usually don't have a problem with boiled eggs not peeling. My son in law puts them in a mason jar with a little cold water after boiling and shakes the jar to get the shell off. Works quite well.

There sure hasn't been much cooking going on at my house as of late, even if it's DH that cooks! We've both been so busy with life and what not that we haven't much of a meal lately. Mainly eating left overs.

Tonight doesn't look any different, Poker night! The question is ... do I want to cook for myself? lol

Tonight we are enjoying my favourite - Salmon stuffed with spinach, pine nuts and sun dried tomatoes mixed with pesto! Yummy! Add a glass of wine with that and I'm in heaven!

Looking forward to dinner already and I just had my breakfast! lol

I am cheating on supper tonight. I pulled out a pan of enchiladas from the freezer I made a while back. I have a salad already done. I decided to get my laundry room cleaned up today, it looks like a fabric store blew up in there. So I am sorting, purging a bit and scrubbing down walls and floor. Now I can keep going and not have to stop to worry about putting together a meal other than popping in the oven. I love freezer meals.

Julie - I know what you mean about freezer meals! I still have about a dozen that I made when I was expecting Emi!
