Oh dear, Sherry, that is so scary! How is she? I'm sure your good cooking is helping her get well. What kind of snake was it? We have a lot of copperhead in our area.

Morning everyone, Thanks for asking about Britt, she can not walk right now and is in a lot of pain, I spent the day at her house yesterday and will go back in a little while when I get my chores done and figure out what I'm fixing for my supper tonight. I made potato soup yesterday for Britt and Pizza for Shelby. Then Shelby helped me sort beans so we could get a pot of them going. Don't know just yet what all I'm fixing today for them. Trying to cook a few extra things up so they can have something to choose from. Take care everyone and watch out for snakes.

Here's my Aunt Edna's Cole slaw recipe that turned me from a kid who wouldn't eat cole slaw into a little slaw piggie!

Aunt Edna's Cole Slaw

1/2 head green cabbage, finely shredded
About 10 radishes, finely shredded
About 2 carrots, finely shredded
1 medium red onion, quartered and thinly sliced
1/2 cup sugar
1/2 cup apple cider vinegar
1/2 cup mayonnaise
1 Tbls fresh lemon juice
1 Tbls salt
1 tsp pepper
1 tsp celery seeds
1 tsp dry mustard

Combine sugar and vinegar in saucepan, bring to simmer over medium heat, stir until sugar dissolves. Allow to cool and then whisk in mayo, lemon juice, salt and pepper, celery seeds and mustard. Pour dressing over veggies and toss to coat.

My aunt always let it chill 24-hours before she served it.

Today someone was having a lovely discussion about if anyone else ate "macaroni and tomato juice". Several people chimed in; most calling it macaroni and tomatoes. My mom always called it noodles and tomatoes. And it sounded good! Though I didn't have macaroni. I made do have Campanelle. :) Who else eats this dish? Also pictured, buttered brussels sprouts, and turkey eat balls with shredded zucchini and carrot!

Sure, 1# ground turkey (we buy from a local source), 1 med carrot, grated very fine, 1 small zucchini, shredded, 1 egg, I also add 1/2 ts of an organic garlic and herb seasoning and about 1/4 c italian shredded cheese. If you wanted, though, you could omit the cheese and egg (add 1 TB Olive Oil in place of egg, to keep it moist). I use a mini scoop to make my meatballs, then bake 375 for 20 min.

My family and I have gotten very aware and concerned about the meats that we eat. I have been sourcing locally completely for a few months now. In an effort to save money, however, I was wondering what some of you ladies' out of the box (and I don't mean processed foods, but, rather, not the norm beans and rice type dishes) low meat or meat free meals?
