Alicia - I think I have told you this before, but we buy a cow once a year that has been grass fed... we drive about an hour to pick it up (one way) but it is worth it for us. Yet at the same time, we also try to spread things out and bulk our meals with veggies... When I use ground beef, I often add diced mushrooms to make it go further. This is especially yummy for tacos and such. We have also found that we really like eggplant IF it has been well seasoned to drain off the excess moisture, and grilled. With you have chickens, you could also scramble up a couple eggs into your meals... think Chinese fried rice idea :)

You have, Shannon. I do add mushrooms occasionally. I seem to be the only one in our family who likes eggplant. ;P I am growing ONE plant!! HAHA!!!

I just love those kind of suppers Alicia. My garden is a ways away from supplying me with supper, but it can do dessert as the strawberries are ripening. Add that to some rhubarb and we have a yummy pie!

I am cooking a larger meal for lunch today to accommodate Matt's schedule, as his mom is coming over. She is going to Italy with her boyfriend on Sat and she has birthday gifts to pass out first. She recently stopped eating meat, so I won't be using any of my precious local meats, lol! She is a city girl and doesn't much appreciate our way of life, though she doesn't say as much typically. Anyway, I wanted to try to show her how special our lifestyle is, so I have a fresh loaf of bread in the oven and am making as close to a Garden to Fork meal as possible. I am making my Veggie Pilaf; barley, rice, quinoa, loads of goodness from the garden, garlic, herbs, and buttery white beans over garlic greens (from the garden). I wanted to make a peach cake, but I fear that this early meal time doesn't allot for it.

That looks really yummy Alicia!

Tonight is simple.... steaks on the grill, baked potatoes, and salad. Our lettuce is done :( But we did get the cucumbers out of the garden :) Still waiting on our peppers and tomatoes to get to the picking point.

We found a local grass fed, grass finished place to buy our beef. All ordered for November. It is only about 3 miles from us. He told me he is hoping to do some poultry too. We have our own for eggs but not for meat. We are waiting on some goodies to be ready from the garden.

Alicia, that looks tasty! I'd love to figure out quinoa. I have some but really have no idea what to do with it.

When we went to town today for appts. The shrimp truck was parked in the co-op parking lot. A few times a year this truck comes from Galeveston, TX with shrimp freshly caught from the gulf. It has been beheaded, packed on ice and is some of the best seafood we can get this far north. I bought 10 pounds, put most of it in the freezer but had to have shrimp sautéed in butter for supper. I also made rice pilaf and sautéed zucchini, summer squash and snow peas. It was so good and there isn't any left overs.
