I bought a bag of fresh ginger (4 oz) so I googled Taste of Home to see how to store it.
Ginger can stay on the counter out of direct sunlight and in a cool place for a couple of days.
In the fridge. Rinse, dry, put in freezer zip lock bag squeezing all the air out. May add a damp paper towel to keep ginger from drying out. Will last a month in the fridge.
To freeze. Rinse, dry, put in freezer zip lock bag squeezing all the air out. Will last many months.
I also found out that ginger skin is edible and has nutrients. I used some of the ginger in a recipe and peeled only one bad place and grated the ginger without peeling. So much easier than peeling all of the ginger and it's healthier too.

I freeze ginger and grate it frozen with my handy dandy ginger grater. So much easier and faster than trying to grate it unfrozen. I love ginger and it is supposed to be good for you and anti-inflammatory.
Thank you Sara, that is great information. Ginger isn't easy to find and then I use just a little bit of it. This will help me save it for next time instead of throwing it away!
