What is your favorite beets recipe? This is my first year growing beets and I have some ready to be eaten. To be honest I have only eaten pickled beets on my salad, so I don’t have any yummy recipes. I would love for the recipe to make them soft so Bexten can eat them too.

Krista, I like to roast beets in the oven with other root vegetables.

It's not really a recipe but besides pickling them I like to slice them and fry them in butter with some salt. Rather than frying them until their crispy it's more of a fry them until they're tender.

I love beets too! Grew all kinds last year! Make pancakes, soups, salads, pickle, smoothies, etc! Pinterest is where I got a lot of my root veggie recipes, especially the beets. Yum. Just making them like Sara said too! OHHH! And try the chips, awesome. Even my Sara lives them lightly salted!

I like to roast with potatoes, carrots & onions. I have another recipe that I can't find right now. Cut beets into matchsticks, cut carrots the same, balsamic vinegar & fresh basil. This is raw, not cooked. If I find the recipe I will post it.

Harvard beets were popular when I was growing up. I went online and found recipes for them. Most called for store bought canned beets, but fresh cooked beets would work. The beets are cooked in a sweet sauce thickened with cornstarch.

Oh Sara, those Harvard beets sound yummy. I think I’ll try that next. Thank you.
I have been roasting them with carrots and then putting honey on top and have liked that.
Heather, that frying sounds delicious. I only have a tiny bit of beets available for dinner tonight so I will try that one tonight.

Pickled beets are my favorite. I canned 12 jars so far this year. I'm saving the juice to make pickled eggs later when egg prices come down.

I love pickled beets too, Judith. That’s exciting you got so many. I’ll have to plan on them for next year. I didn’t plant near enough to can any. Was sort of a last minute throw into the garden just for fun. Turns out my family really enjoys them. They will stay around for years to come now.

I have a hummus recipe that incorporates blended roasted beets into the chickpeas. The beets add an element of sweetness and it is delicious. Not to mention the incredible colour!! You could do a similar thing by blending the roasted beets with other vegetables for Bexten to eat.
Also - Roasted beets and goats cheese are a match made in heaven!!

Cindy -- What a great idea! I have some garbanzos in the freezer that I overcooked in the pressure cooker that will be great for hummus. Adding the beets will make it so yummy.

Cindy, can you believe that I have actually never tried hummus. Now I’m going to have to try it and include the beets. Bexten would love that. He already loves beets alone.
