I'm not kidding. I made my first one earlier tonight because I "double parked" myself into two meetings. So I figured - no better time! I whipped out my Pampered Chef ripple slicer (that SIL gave as a housewarming gift 9 years ago) and just started thick slicing veggies: turnips, potatoes, green peppers, red peppers, orange peppers, sweet onions, spinach, and zucchini. Threw in some chicken, sweet rice wine vinegar, Tabasco, light soy, and a dash of lemon juice. A little Trader Joe's 21 Seasoning Salute. Gave the whole thing a hearty sweat in the *super heavy* 12" cast-iron skillet. Did MJ's WW Baking Mix all across the top pie-crust style. Popped it into the oven on a low-bake at 200 at 6:35p and took off for my first meeting for Cub Scouts where hubby was. Told him to go home at 8:10 and enjoy his dinner.

Well, I got home from my second meeting at 10:30. *WOW* - I'll say he enjoyed it - he cleared *HALF* of the 12" skillet!!! The man isn't a pig - he just loves his veggies. I'm thinking MJs Bakeover has found another forever home.

Wow! what a yummy combination! I would never have thought to put together all those veggies. I made one the other night after swim class and my 15 month old can't get enough of it. He just sits there sweetly smiling and alternating between attempting to use his spoon and successfully using his fingers :)

That's the great thing about the bakeovers, you can make 'em up as you go. Bake fruit instead of veggies or do as Kaylyn did. And by the way that sounds yummy.

Arent' BakeOvers just the handiest! The other night I made one from zucchini, onions, cheese and garlic and it was GONE!!! They really are such a great thing for those nights when you just aren't quite sure what to make for dinner...and it's already 4:30pm!
