We did our bake over party and made pizza, apple pie and a new apple pineapple bake over. They all turned out great.
Pizza - Bake over mix, sauce, cheese, ham, sausage, mushrooms, bell peppers, pineapple.
Apple pie - bake over mix, apples, sugar, cinnamon, butter.
Apple/Pineapple - bake over mix, apples, sugar, pineapple chunks, butter.

BakeOvers are fun and they always turn out delicious. Plus the sky is the limit as to what you combine for the topping. Enjoy creating more yummy dishes in future meals!

They all sound good Candy. I just bought more BakeOver mix. My plan is to use it with leftovers. The first one I made was a big hit.

I have been working on my intermediate BakeOver MakeOver merit badge and have created 2 new recipes to share:-

For my two new Bakeover recipes, I used MaryJane’s Crust Recipe from her “MaryJane’s Ideabook” page 91, except that I substituted Gluten-free flour (a mix of 34% brown rice flour, 12% quinoa flour, 20% tapioca flour, 34% potato starch):-
1 ½ cups four
2 tsp baking powder
¼ tsp baking soda
¾ tsp salt
3 tbsp butter
½ cup water

Mix dry ingredients. Cut in butter. Add water, form dough into a ball, and roll out a top crust.

For the first Bakeover, I used a fennel bulb, finely chopped; ½ cup finely chopped dates; ¼ cup crushed toasted almonds.
The second Bakeover was a combination of Roma tomatoes (enough slices to cover the base of the pan); fetta cheese, crumbed; fresh herbs (I used thyme and oregano), pepper.

I have continued creating a few more Bakeover recipes for my Expert merit badge:-

Breakfast Bakeover - Dried fruit (apricots, apple, prunes, pears) and marmalade - cooked to a compote consistency. Then I used the crust recipe in my previous post.

Lunch - Middle-Eastern Lamb Bakeover (brown onion, tomato paste, garlic, cumin, coriander, cinnamon, lamb mince all sauted), add pine nuts. Once cooked, serve with fresh mint and plain Greek-yoghurt;

Dinner - Fennel, Sweet potato, Goat's cheese, onion, garlic, capers, dried chilli flakes, tomatoes, oregano;

Dessert - Plums, brown sugar, and orange juice (roast until soft) then top with crust;

Thanks Ladies! I would have to say that my favourite Bakeovers so far would to be the Middle-Eastern Lamb Bakeover and the Apple & Dwarf Peach Bakeover that I made for the Apples merit badge. Yum!!
