Thanks Shelle, I'm always looking for info on this subject. I took a good class from my local extension office last year, but I'm still afraid to try it with my ceramic cook top. I ended up freezing veggies in my canning jars and they came out just great. I didn't know you could do that till I took that class. Thanks again, Lu

Thanks for that link, Shelle. I really, really hope to be able to do some canning this summer. Many years ago, I made jams and jellies, but I've never canned veggies.

I also want to start canning again this year. It has been years since I canned anything but i used to can tomatoes, salsa, and jellies. I just want to get back to doing it again and I know I will have to relearn the whole process.
