Stupid question, but even my friend, who is a clone of Martha Stewart (minus the jail time!) doesn't know the answer to. Foil has a shiny side and a matte side. What side goes toward the food and what side goes out? I have always put it shiny side out, but now am wondering if that is right? Anyone know the answer and if so what the reasoning is behind it. I love barbequing salmon in foil!

According to that article it doesn't matter which side is in or out...I generally put the shiny side out when cooking in a dish because that's just the way it comes out of the box and when wrapping something it tends to end up with the shiny side in because it's easier to pull it out of the box and lay it down on the counter as it comes, if that makes sense...lol
I always put the shiny side out. Was always told that the shiny side reflects heat better. But I think I do it that way because that's how my grandma and my mom always did it. LOL!
Glad to know it really doesn't matter! I was thinking I was somehow missing some basic knowledge of cooking! LOL! So I feel so much better now. I usually do it shiny side out, but like Shirley, it is all a "looks thing". LOL!

I have always flipped the foil as it comes off the roll so the shiny side is out. Good to know I can now save a step! ;) That's a very good article as well.
