This was one of my weekend projects...a new healthier take on an old timey cake. Of course the original called for white flour/sugar and didnt firment the flour, but mine turned out fabulous and you couldn't even tell it was supose to be good for you! it is even light...my brother would call it "real" cake (as opposed to that junk Trina makes)


1 cup starter
2 cups whole wheat flour
1.5 cups water

--mix well before covering and allowing to stand overnight--

1/2 cup hot water
1/2 tsp salt
1 1/2 t soda
1 t vanilla
1 t cinnamon
1/2 melted butter
2 eggs (slightly beaten)
1 1/4 cups sucanat
1/4 cups cocoa

the following day, disolve salt and soda in water before adding to sourdough mix. stir throuraly, but gently. add remaining ingredients still stirring gently. pour into buttered pans and bake for 45 minutes at 350.

WOw, I am going to have to try this! I just got some sour dough starter and I'm sure in no time I'll have more then I want of it! Extra recipes using it up are great! Thanks for sharing!!

I did go to the "real food" section to top it off. When the cake had just finished cooking I sprinkled the top with about 1/2 bag of chocolate chips and popped it back into the cooling oven for a couple minutes before spreading them around. I haven't found a satisfactory healthfood frosting yet...would be glad if anybody could share!

There's a large soft cover book called Sourdough Cookery by Rita Davenport that has lots of good soudough recipes like this. I expect it's out of print, but think you can do a search (in local thrift shops or online) for it. My original copy is falling apart from use and I finally found another recently. The Carrot Cake recipe in there is the best and that's the page it opens to automatically and is splattered. I think it's from the mid 70's by HP books.

I know you can make a really yummy frosting out of yogurt and whipped cream.

The cake recipe looks amazing! Once I get my sourdough starter going I will have to try this!

I've mixed up the starter and flour to sit until tomorrow, and I think we'll have this cake for Sunday dutch oven dinner's dessert! Thanks!!!
