Not sure if I have shared this before? This works like magic! Great for pies, cobblers, crisps, etc.!
Stovetop Apple Pie Filling
Ingredients 4 medium apples 3 tablespoons water 2 tablespoons butter 1 teaspoon cinnamon 1/3 cup sugar 1 tablespoon + 1 teaspoon cornstarch 2 tablespoons water Instructions Peel, core and slice apples.
Melt butter and cinnamon over medium heat. Stir in apples, sugar & 3 tablespoons water. Cover and cook stirring occasionally for 4-6 minutes or until very slightly softened. In a small dish combine cornstarch and water. Add to pan while stirring and continue to cook until apples are soft (not mushy) and filling is thickened. Let bubble 1 minute. Cool.
Notes Some apples are juicier than others. If you would like your filling thicker, combine 1 tablespoon cornstarch with 1 tablespoon water. Add a little at a time while the mixture is boiling until you reach desired consistency.

Caramel Apple Cupcakes - Made these for DS's class last year and boy were they GOOD! I would totally make these again!
Prep Time 20 mins Cook Time 24 mins Total Time 44 mins Course: Dessert Servings: 24 cupcakes Author: The Gunny Sack
Cupcakes: 1 boxed spice cake mix *see note below 3/4 cup Musselman’s Apple Butter 1 cup apples peeled and chopped 1/2 cup oil 3 eggs
Cream Cheese Buttercream: 1 cup butter softened 1/2 cup shortening 4 oz cream cheese softened 8 cups powdered sugar 2 tbsp Musselman’s Apple Butter Topping: 1 cup caramel ice cream topping
Cupcakes:
Mix together the spice cake mix, apple butter, apples, oil and eggs for 30 seconds on low speed and two minutes on medium speed.
Divide the batter between 24 muffin cups that have been lined with cupcake wrappers. Fill each about 2/3 of the way. Bake at 350 degrees for 20-24 minutes until a toothpick inserted in the middle comes out clean.
Once the cupcakes have cooled, frost them with the cream cheese buttercream (recipe below) leaving a well in the center.
Before serving, warm the caramel ice cream topping in a microwave-safe bowl. Spoon the warm caramel into the well in the center of the frosting and drizzle it across the top.
Cream Cheese Buttercream:
Beat the softened butter, shortening and softened cream cheese until light and fluffy, about two minutes. Mix in the powdered sugar, one cup at a time. Add the apple butter and beat until smooth.
Recipe Notes
If you are unable to find spice cake mix, you can make your own by whisking together one yellow cake mix, 1 tsp ground cinnamon, 1/2 tsp ground nutmeg, 1/4 tsp ground allspice and 1/4 tsp ground cloves until combined.

I found this recipe in an older fall Gooseberry Patch book and it was delicious! It is called Baked Apple & Carrot Casserole
3 large apples cored and sliced 2 carrots sliced thin 1/4 C brown sugar packed 2 Tbls regular all purpose flour pinch of salt 3/4 cup orange juice or apple juice
Arrange half of the apples and carrots in a greased casserole dish, repeat with the rest of the apples and carrots. Sprinkle sugar, flour and salt on top. Pour juice over the top and bake at 350degrees for about 30-40 minutes or until apples and carrots are tender. This makes a great side dish for pork chops, ham, baked chicken, or baked turkey. I love the fact that it uses apples and carrots which are available all year.

Here's one that I love:
Apple Pecan Cobbler
Ingredients
4 cups thinly sliced apples 1/2 cup white sugar 1/2 teaspoon ground cinnamon 1/2 cup chopped pecans 1 cup all-purpose flour 1 cup white sugar
1 teaspoon baking powder 1/4 teaspoon salt 1 egg, beaten 1/2 cup evaporated milk 1/3 cup butter, melted 1/4 cup chopped pecans
Directions
Preheat oven to 325 degrees F (165 degrees C). Generously grease a 2-quart baking dish. Arrange apple slices in an even layer in the baking dish. In a small bowl, mix together 1/2 cup sugar, cinnamon, and 1/2 cup pecans. Sprinkle mixture over apples. In a medium bowl, mix together flour, 1 cup sugar, baking powder, and salt. In a separate bowl whisk together egg, evaporated milk, and melted butter. Pour milk mixture into flour mixture all at once, and stir until smooth. Pour mixture over apples, and sprinkle top with 1/4 cup pecans. Bake in the preheated oven for 55 minutes. I usually use raw cane sugar in lieu of white sugar. Brown sugar gives this dish a caramel flavor.

It reminds me of this one:
Butternut Squash, Apple, and Potato Gratin with Cheddar Crumb Topping adapted from Fine Cooking
Topping 1 1/2 cups panko bread crumbs 2 tablespoons unsalted butter, melted 3 oz (3/4 cup) grated sharp cheddar cheese 1 teaspoon chopped fresh thyme leaves
Gratin 3 tablespoons unsalted butter, divided 1 cup diced onion (about 1 medium) 2/3 cup plus 1/4 cup apple cider, divided 3/4 cup heavy cream, divided 2 teaspoons chopped fresh thyme leaves 2 Braeburn apples (or other firm, crisp variety) (about 14 oz total), peeled, cored, and thinly sliced 12 oz butternut squash (neck portion only) 2 medium Yukon Gold potatoes (12 oz total)
To make the topping: In a medium bowl, stir together the bread crumbs, melted butter, and a pinch of kosher salt until the crumbs are evenly moistened. Add the cheese and thyme and mix until evenly distributed.
To make the gratin: Preheat oven to 350 F. Spray a 2-quart baking dish with nonstick cooking spray.
Add 1 tablespoon of the butter to a small nonstick pan and set over medium heat. When the butter has melted and the pan is hot, add the onions. Cook, stirring frequently, until the onions have softened and started to brown, about 10-12 minutes. Add 2/3 cup of the apple cider to the pan, and simmer for 2 minutes to reduce slightly. Stir in 1/2 cup of the heavy cream, the thyme leaves, a pinch of salt and a pinch of black pepper. Stir to combine then set aside.
Add the remaining 2 tablespoons of butter to a large nonstick skillet and set over medium heat. When the butter has melted and the pan is hot, increase the heat to medium high and add the sliced apples. Cook for about 10 minutes, gently stirring and flipping occasionally, until the apples are tender and browned, but not falling apart. Stir in the remaining 1/4 cup of apple cider and the remaining 1/4 cup of heavy cream. Cook for just a few seconds, then remove the pan from the heat and set aside.
To assemble: Peel the butternut squash and cut the neck into quarters lengthwise, then cut crosswise into 1/8-inch slices (a mandoline is the easiest way to do this, but if you don’t have one you can do it with a knife too). Peel the potatoes and cut then in half, then cut each half into 1/8-inch thick slices (again, with a mandoline if possible). Add the squash and potato slices to a large bowl, then add the onion mixture, the apple mixture, and 1 1/2 teaspoons kosher salt. Gently toss until well combined.
Transfer the mixture to the prepared baking dish and spread in an even layer. Distribute the topping evenly over the filling. Bake until the topping is a dark golden brown color, and the juices around the edge of the pan have mostly stopped bubbling. If you used a shallow baking dish, this should take about 60-75 minutes, but if you chose a deeper baking dish, it may take longer (my dish was very deep and took about 1 hour and 45 minutes). I grabbed a spoonful from the edge of the pan and checked a few potatoes just to make sure they were tender as I found they took the longest to cook through.
Remove the pan and let the gratin sit for 15-20 minutes before serving (it needs that time for the juices to settle and thicken slightly).

This is a tried and true! Have made it many times - very impressive but really very easy!
Apple Cheese Danish
Filling: 8 ounces cream cheese, room temperature 3 tablespoon ricotta 1 lemon, zest and juice used 1/2 teaspoon vanilla extract 1/8 teaspoon Kosher salt 5 tablespoons sugar, divided 2 Gala apples 1/2 teaspoon cinnamon 1 box of frozen puff pastry, defrosted
Icing: 3/4 cup confectioner’s sugar 1 tablespoon whole milk
Preheat the oven to 400 degrees F.
In a medium bowl, place the cream cheese, ricotta, lemon zest, vanilla, salt, 4 tablespoons of sugar and mix until smooth, using an electric mixer fitted with a paddle attachment. Set aside.
NOTE: This is WAY too much for just two danishes. You could easily halve this and still not really need it all.
Peel and slice your apples into 1/4-inch slices. In a small bowl toss them with 1 tablespoon of sugar, cinnamon and juice from the one lemon.
Carefully unfold 1 sheet of puff pastry and roll slightly with a floured rolling pin until it’s about 1/4-inch in thickness. Transfer the sheet of puff pastry to a piece of parchment.
At an angle, slice off the top corners and cut two notches in the bottom. Slice 1-inch strips diagonally down both sides of the puff pastry, leaving the center uncut. Try to cut the same amount of strips on both sides.

Add three tablespoons of cream cheese filling, spreading it evenly down the center of the puff pastry. Top with apple slices. Fold in the bottom and top flaps. Braid the puff pastry, by folding the strips over the filing, alternating sides, until you’ve worked your way down the puff pastry. Using your knife, trim off any leftover strips or extra dough.
Transfer the danish (with parchment) to a baking sheet, and brush top with egg wash. Refrigerate for 15 minutes. Transfer baking sheet to oven and bake for about 20 minutes, or until puffed up and golden brown.
Repeat with the second sheet of puff pastry.
While baking, mix confectioner’s sugar with milk and mix. When the danish comes out of the oven, drizzle top with icing and serve warm.
Yields 2 Medium Danishes

Here's a oldie but goodie recipe for baked apples.
Wash - dry - core apples.
Put in oven safe dish.
Put butter and red-hots candy in apple.
Bake in 350 oven until apples are tender.
Variation: Pour Coke or Dr. Pepper over apples with or without red-hots.

Pioneer Woman Caramel Apple Sweet Rolls
PREP TIME: 90 Minutes
DIFFICULTY: Easy
COOK TIME: 30 Minutes
SERVINGS: 30 Servings
Dough 2 cups Whole Milk 1/2 cup Vegetable Oil 1/2 cup Sugar 4-1/2 cups All-purpose Flour 1 package Active Dry Yeast (about 2 1/4 Teaspoons) 3/4 teaspoons Baking Powder 1/2 teaspoon Baking Soda 1-1/2 teaspoon Salt
Filling 4 whole Granny Smith Apples, Finely Diced 1 stick Butter (1/2 Cup) 1 cup Lightly Packed Brown Sugar 1/2 cup Heavy Cream 1 teaspoon Ground Cinnamon
CARAMEL ICING 1 stick Butter (1/2 Cup) 1 cup Packed Brown Sugar 1/2 cup Heavy Cream 2 cups Powdered Sugar (up To 4 Cups Depending On Consistency You Want.) 1/4 teaspoon Salt
INSTRUCTIONS
DOUGH
To make the dough, combine the milk, vegetable oil, and sugar in a large saucepan or small pot. Heat it until just about to boil, but don't allow it to boil. Turn off the heat and let it cool until warm...but not too warm!
Add 4 cups of the flour and the yeast, and stir to combine. The dough will be very sticky at this point. Cover the pot and let it rise for an hour.
Add the remaining flour, the baking soda, the baking powder, and the salt. Stir to combine. Then you can proceed with the rolls OR refrigerate the dough, covered, until you need it.
FILLING
To make the filling, saute the apples in a large skillet over medium-high heat for 3 to 4 minutes. Remove them to a plate and set aside.
In the same skillet over medium heat, add a stick of butter and a cup of brown sugar. Stir it around until the butter melts and the sugar dissolves, then pour in the cream. Stir it around and let it bubble up and thicken for about a minute. Turn the heat to low and add the apples back to the skillet. Sprinkle in the cinnamon, stir the mixture, and let it thicken for another 1 to 2 minutes. Spoon it into a bowl to cool.
ROLLS
When you're ready to make the rolls, preheat the oven to 375 degrees and roll out the dough on a floured surface to a rectangle about 10 x 30 inches. Spoon the caramel apples all over the dough and spread it out evenly. Roll the dough toward you into a long, tight roll. Pinch the seam when you get to the end, then turn the roll over so that it's seam side down.
Slice the dough into rolls 1/2 inch to 3/4 inch thick and place them into disposable roil cake pans with a little melted butter spread into the bottom of each pan (the rolls will fill about 3 to 4 pans.) Set the rolls aside and let them rise for 20 to 25 minutes, then bake them for 15 to 18 minutes, or until they're nice and golden.
ICING
While the rolls are rising or baking, make the icing: Melt the butter and brown sugar in a saucepan over medium heat. Add the brown sugar and let it dissolve and start to bubble. Add the cream, then cook for 2 minutes, whisking constantly. Turn off the heat and add the powdered sugar and whisk together. Add up to 2 more cups of powdered sugar to get to the consistency you want.
The second the rolls come out of the oven top with the icing and spread to coat all the rolls generously!
Serve warm.
(One roll is more than enough for one person! These are super rich.)

I've made this many times over the years - one of the first yeast breads I ever made actually :)
Apple Filled Sweet Bread - Great American Home Baking
Makes 2 loaves
2 packages active dry yeast ½ cup warm milk (105-115F) 2-2 ½ cups flour 1 T sugar ¼ tsp salt ½ cup chilled butter, cut into small pieces 1 large egg, lightly beaten
Filling 3 medium McINtosh or Golden Delicous apples, peeled, cored, and thinly sliced 2 T sugar 1 tsp cinnamon
Glaze and Icing 1 large egg 1 tsp water 1 cup powdered sugar 1 T water
In a small bowl, dissolve yeast in warm milk. Let stand until foamy, 5-10 minutes.
In a large bowl, mix together 2 cups of flour, sugar and salt. Using a pastry blender or 2 knives, cut butter into flour mixture until coarse crumbs form. Add yeast mixture to flour mixture. Add beaten egg. Mix just until flour mixture is moistened.
On a floured surface, knead dough just until it holds together, 1 to 2 minutes, adding more flour to prevent sticking. Grease a baking sheet. Divide dough in half. Using a floured rolling pin, roll each dough half into a 12x8 inch strip. Place on prepared baking sheet.
To prepare filling, mix together all ingredients. Spoon half of filling in a 4 inch wide strip lengthwise down center of each dough strip. Cut dough on both sides of filling crosswise into 1 inch strips just to filling. Place strips over filling, alternating sides and overlapping slightly. Pinch ends to seal. Cover loosely with a damp cloth; let rise in a warm place until puffy, 1 hour.
Preheat oven to 425F. To prepare glaze, mix together egg and water. Brush over loaves. Bake loaves until they are golden brown, 15 to 20 minutes. To prepare icing, mix together powdered sugar and water. Drizzle icing over hot loaves. Transfer to wire rack to cool.

Often a summer breakfast, this dish incorporated leftover rice. This recipe came about when it was discovered there was no more oatmeal left. The toppings are suitable for many breakfast cereals.
1 small apple 2 cups cooked rice 2 cups milk 1/4 cup brown sugar 1/4 cup raisins 1/2 tsp cinnamon a little salt
Core, quarter, and dice apple. Add to rice. Add milk, brown sugar, raisins, cinnamon, and salt.
Cook over low heat for 10 minutes.
Can't believe there's no butter. When I make this dish I think I will substitute 1 cup cream for one of the cups of milk or add butter. Also I will probably have it for supper instead of breakfast. I like hot cereal and buttered toast for supper. Maybe a couple slices of bacon.

Jezebel Sauce Texas Slow Cooker Cookbook
1/4 c apple jelly 3 Tbsp Creole or brown mustard 1 Tbsp ketchup 2 tsp soy sauce 1 Tbsp prepared horseradish, or more to taste
Good over cream cheese with crackers. Marinate for baby back ribs.
