Oh My Stars!! if you haven't peeked into the MJ Cast Iron Cookbook,,, well, ya just gotta!!!!
I found sooo many fab recipes that I am looking forward to trying... once our household gets shipped up here,,, and I can find my 2 cast iron pans...
One of the pans id from my Grandma Jackson, so it will be especially special to use...

I got mine over a week ago. There are some great recipes in there. I only have one cast iron skillet - may need to get more.

I made the Pastor's Pie on Saturday.....so yummy. The biscuit recipe is the best baking powder biscuit I have ever tasted. You know how they sometimes get dry and crumbly the next day.....not this recipe. they are better the next day!

The scalloped potato dish is so awesome. You all must get a cast iron dutch oven. It's worth the price. Cast iron elevated this dish from mundane to divine.

Sylvia,,, I am 'chomping at the bit' to try out some of the recipes... but can't,,, my C.I. pans are in storage still until we get moved in ... and today,, as cold as it is,,, I would love a helping of scalloped taters!!!

Just got my cookbook today! Mary Jane just does the BEST books! Some wonderful recipes. I have several pieces so am good to go on many recipes. I don't have a muffin pan and that would be the one piece I would need to get.
I've got my eye on the Giant Cinnamon Roll!!

Well I made the Giant Cinnamon Roll for Thanksgiving breakfast and the Pecan Crust Sweet Potato Pie for Thanksgiving dessert.
They both came out GREAT!!!! I made just a few adjustments to recipes but they are "do it again" recipes, for sure.
I'll post pics of both of them later . . yep, I took pics!

The Pecan Crust Sweet Potato Pie . . . this pic was taken at night by kitchen light, so funny color. I was too lazy to do the pinched crust too! It still tasted very good!

I have been putting off getting the book due to funds but I think I may have to save my pennies a little faster. Looks like everyone is very happy with it and I have tons of cast iron. I need some good recipes!

I was in 'Lowes' today and when passing by their magazine rack,, I spotted this..

a magazine for cast iron cooking...
I had no clue how popular cast iron cooking is.. where have I been hiding? under a rock? lol!

and OMGeepers,,, when did magazines start costing as much as a book... I noticed the average price for the magazines in that rack was $9.95 and some were $12-15.00 Yikes!

Oh my goodness those look wonderful CJ! Are those recipes in the Cast Iron Cookbook? If so, I need to pull them out and get busy as I think the cinnamon roll will be wonderful for Christmas morning. Were they as delicious as they look?

My version of the Biscuit & Chicken Skillet Pie. I sprinkled addtional rosemary, lemon basil, thyme and savory over the chicken/veggie mix. And, I'm too lazy to roll out biscuits so I made the drop biscuits! It was VERY TASTY!!!!
