YES! I think MaryJane’s Cast Iron cookbook will now be one of my most favorites! I LOVE it!!!!!!

Yes, Jana, all those recipes are in MJs Cast Iron cookbook! They ARE DELICIOUS! I'm trying to decide what I'll try next . . possibly some chile in a Dutch Oven. Hubby and I have been REALLY SICK with the flu since Christmas Day. We were hit HARD and still trying to get well and get some energy and stamina back. It's been ROUGH. So, we're not cooking much . . .

But, they are VERY WORTH IT!!

P.S. My topping on the cinnamon roll is the same one for the sweet potatoe pie. We like pecan/caramel-y type topping on our cinnamon rolls!

As I slowly am un-packing my kitchenware,, I haven't had much time to bake or cook... but I promised hubby I would bake some cinnebons,, and what better time to experiment with my cast iron skillet...

Let me just say that MJ’s “Baked Chicken and Squash” with the “Herbed Honey Mustard” sauce in this cookbook is DELISH! My family has asked me to put it on the “will repeat frequently” recipe list. I cant wait to try some of the other recipes. I love anytime I can use my cast iron skillet ware!

Well, I have to say that my hubby and I REALLY LIKED the Squash and Chicken recipe. It was VERY, VERY TASTY! I used chicken breasts instead of thighs, because that's what I had in the freezer! Gonna be doing that one again too!!

I Have Mary Jane's Cast Iron Kitchen, and I also found a cookbook at JoAnns a while back called Cast Iron Cooking Inside and Out. I've attached a picture of the cover and the List of Recipes. A friend of mine cooks in Cast Iron all the time - she says that's how her mother taught her. I only have one cast iron skillet and one cast iron pan that makes 6 Christmas tree shaped muffins or corn bread. I got it at my favorite thrift shop.

I just ordered mine thanks to a gift card we got for Christmas!! I wanted to get the wild bread book too but it didn't quite cover shipping which would have been fine but I couldn't pay for part with the gift card and part with my regular card :(. Maybe I can get the bread book next month.

Yesterday I made beef stew in my Dutch Oven. There isn't a specific stew recipe in Mary Janes book but I looked at the Coffee Pot Roast recipe for some ideas and yes, I used coffee. Since it was for supper I made decaf coffee. It was REALLY GOOD! We raise our own beef and had a package of stew meat in the freezer, along with our homegrown carrots. Potatoes were from a vendor at our local Winter Farmers Market. Along with onion, garlic, serrano pepper, rosemary, bay leaves, basil and oregano. I first marinated the stew meat in some spicy vinegar (that I put together myself some time ago).
VERY YUMMY!!

On Monday I decided it was time to try the Carrot Bread recipe which I did . . . another YUMMY recipe.
I don't have cast iron loaf pans, so I used my Pyrex glass loaf pans ... we'll be doing this one again too!
Carrots homegrown in our garden too!
