I made this vegetarian entrée from the current MJF magazine for dinner last night. It was delicious, a great dish for a potluck. I did switch out the Monterey Jack cheese for Pepper Jack to add a little more kick. We have about half leftover for tonight's dinner. I'm looking forward to it.
