My brother gave me a wild goose the other day and I need a recipe to roast it. None of my cookbooks have any goose recipes in them. I can roast a turkey, capon and chicken with the best of them. But do I need to do anything different with a goose?

Page 5 this Forum, there were a bunch of us cooking goose back around Christmas time. Some good info there. Dont forget to cook it on a rack in your roasting pan and put water in the roaster so when the fat drips it doesn't burn! Good luck and Bon appetite!

Thanks for letting me know where to look for some ideas. I really appreciate all the notes about how to deal with the fat. Not sure about the picture and essay, but we'll see what I get when I cook it. Again, thanks for your help, comments and stories!
