My brother gave me a wild goose the other day and I need a recipe to roast it. None of my cookbooks have any goose recipes in them. I can roast a turkey, capon and chicken with the best of them. But do I need to do anything different with a goose? Thanks, Dawn in IL
Page 5 this Forum, there were a bunch of us cooking goose back around Christmas time. Some good info there. Dont forget to cook it on a rack in your roasting pan and put water in the roaster so when the fat drips it doesn't burn! Good luck and Bon appetite!
