I have one! One of my former coworkers makes it every year and she gave me the recipe ages ago. I'll have to dig it out for you!

we hope to venture into sausage and hot dog and brat making this year. Got a smoker for Christmas.

Got it! Sorry it took so long!

Holiday Summer Sausage

Prep Time: 4 Days
Cooking Time: 8 Hours
Serves: 5 rolls

5 lb hamburger
5 rounded tsp. Tender quick salt
2.5 tsp coarse black pepper
2.5 tsp garlic salt
2.5 tsp mustard seeds
1 tsp liquid smoke

Mix all ingredients thoroughly. Cover well and refrigerate. Mix once a day for 3 days. Fourth day, roll into tight rolls. Place on broiler pan and bake 150 degrees for 8 hours. Turn 5 or 6 times. Keep in oven until completely cool.
