With all this rain, I really wanted something easy, but warm and toasty last night. I thought I might be sweet-potatoed-out after the holidays, but I'll tell you--I made a curried sweet potato soup with chive cream last night, baked a head of garlic, and a loaf of french bread (with kosher salt and a tiny pitcher of olive oil for drizzling) for dinner. Because the President was on, we stood at the kitchen counter, eating, while husband played "dj" putting in various favorite songs on the cd changer. It was super easy and really hit the spot!
That dinner rocked in more ways than one!

Hi Marybeth-- It was a great night--I kindof felt like a teen, eating at the counter standing up, though I would never have eaten this soup then! It was really easy, and the result was so satisfying. I'd be glad to share what I did, though nothing is set in stone... 4 cups of chicken broth about 2lbs. sweet potatoes (peeled and cut into chunks for easier cooking) 2 tsps of curry powder cayenne pepper if you like a little heat (I do, especially with the curry) I guess you could even use the Hot Madras Curry Powder, and kill two birds with one stone! small onion 1 cup of 2% milk
whipping cream chives
I sauteed the onion in a bit of bacon grease, but you can use whatever you want (olive oil, what have you) added all my broth, curry, cayenne and sweet potatoes and brought to a boil, boil until tender. Remove potatoes with slotted spoon and put in a food processor or even blender. Blend until smooth, add one cup of broth, blend again. Return potato mixture to pot on stove, add milk and simmer over low, whisking all together for about 10-15 minutes more, allowing flavors to meld. Add salt and pepper to taste.
For cream, and I suppose even sour cream might work well, too. Beat cream and chives until somewhat stiff, add a dollop to hot soup.

Sounds delightful! My husband loves curry and I'm always a little nervous to cook with it. But I love sweet potatoes, so this would be a great place to start!
Side question: Can you whip real cream without a mixer or hand-mixer? I mean, of course you can because our grandmothers and great-grandmothers did...but how do you do it and what are the tricks?
I think I may make this tomorrow night and will be happy to report!

I've whipped cream with my whisk just to try and do it. It takes awhile, but can be done. Get the whisk, bowl and cream really cold.

Yep--it's pretty easy to do with a whisk, though my "typist's" wrist gets a little angry! I have found that if I do it with a hand mixer, I get it TOO stiff and the cream doesn't flow.
I'm anxious to hear how it turns out for everyone--like I said, add what you will!
Marybeth, you be SUPER careful getting out in the weather. But, enjoy how warm it makes you feel when you make it!
