I cooked a spaghetti squash today and divided it up in one serving portions to freeze. Besides the usual spaghetti sauce what else would be quick and easy to make for a one serving dish? When you cook for one you have to be creative.

I don't have a main meal recipe but I really love putting brown sugar on my spaghetti squash. It adds a little bit of sweetness and fun!

Thanks Krista, I like squash, apples, and pork together. A one serving dish with a little left over pork cooked with apple and brown sugar over the spa squash does sound good. Crisp fried bacon or link sausage could be substituted for the pork. Your idea of brown sugar with spa squash is a keeper.

I like to cook apples and squash together and then add a touch of butter and a dash of cinnamon and brown sugar. If the apples are sweet, you don't need much sugar at all.

Last year I used a recipe that called for 6 cups of cheese... so naturally it was delicious.

Thanks Rachel for the recipe. I printed it.

Most recipes call for cooking spa squash in the oven. I cook mine in the microwave wrapped in Press n/ Seal. For a small squash it takes about nine minutes.

I cook butternut squash, whole cauliflower & cabbage the same way.

Wash the squash/other veg - poke holes in the skin - wrap in Press n/ Seal and Microwave. Time will vary with size of squash/veg and oven. When it is soft to touch it is ready.

Sara, I cook mine in the microwave as well, but I actually cut mine in half, scoop out the seeds, and place in a glass Pyrex dish with water. Lately I have also been cutting up the squash and steaming it in the steamer.

Krista, I cook mine whole because most days I don't have enough strength in my hands to cut it in half. I find cooking it with the seeds doesn't change the flavor any and I think they scoop out easier.

I usually cook mine in the regular oven whole as well. I agree with you, I think the seeds scoop out easier after cooking too!

We like to cut the "spaghetti" into smaller pieces and saute with a little butter, chopped onion, green chiles and top with grated cheese.

Our favorite cheese is Cabot White Extra Sharp Cheddar. But go with whatever your favorite is. We also saute garlic with that as well.
