Hi! This is my first time posting:) I was wondering if anybody has had a success with ChillOver Jelly? If you had could you post your recipes? I would really appreciate it! I just bought some ChillOver and know there is a recipe for jam but our family eats jelly

Elisabeth, so far I have made violet, dandelion, and honeysuckle jelly this year using the ChillOver powder. If you want the recipes I can post them, however, will you spend the time picking and preparing the flowers? lol. (Some will) Really, after the juice is prepared I just use the same amount of ChillOver powder as their is in the powdered pectin (ounce per ounce)...and I do like the way the ChillOver powder sets up. I plan to use it all the time now. I'll plan to do fruit jellies as the farmer's markets start selling. Here are my recipes: countrylife.lehmans.com/2011/06/14/honeysuckle-jelly/ (my honeysuckle jelly turns a beautiful, rosy pink since I do not have yellow honeysuckle. The pink is its natural color in my woods. prairielandherbs.com/dandelionjelly.htm is where I found my dandelion jelly recipe. I did end up putting a drop or two of green food coloring into the pan when I put the infusion, sugar and lemon juice into pan. It came out a pretty jewel-like color. The first year I left it the natural yellow color and I thought it looked yucky. www.prairielandherbs.com/violetjelly.htm is also where I found my violet jelly. It turns out so pretty.
Last year I canned the jelly in pretty little 4 oz. jars. Thinking the would make tasty little gifts. Well, when I went back to the persons who were gifted...there sat the jelly. They said they were too cute to open. So, this year I put it in regular size jelly jars. Yes! The jars are open and my friends/family are enjoying the jelly!

I'll do the regular jellies like wild black raspberries and strawberry in the same way. The rosy colored jelly is violet. The ChillOver directions suggest using a shaker to sprinkle and mix in powder. I did this and would strongly suggest it. Otherwise, it won't mix in well. (trust me)

Oh those are pretty!! So the Parmesan/pepper shaker works well? That's a smart idea because it can hold more than a salt shaker. I want to make sure I have this right... Our grape jelly recipe we have always used calls for 1 box of SureJell which is 1.75oz so you just use 1.75 oz of ChillOver right?

Right. That's what I did anyway. The shaker worked great! (It's one I had on hand with powdered sugar in it. Now, I will keep it for the ChillOver. I also made a shrimp mousse (appetizer spread) over Christmas using the ChillOver powder instead of the knox gelatin powder. Same thing with the measurement. It turned out great!
BTW- welcome to posting, Elisabeth! I know you will enjoy it!

Thank you, Kelly. I call them the family jewels. (lol) They pretty much taste like honey.

Has anyone experimented with use less sugar then the recipe provide with the chillover powder recommends or no sugar at all? Has anyone experimented with alternative sweeteners?
