I have made a couple of rhubarb surprise pies so far this spring. Plan on doing a batch of jam, and a few dump cakes. Rhubarb is sure the taste of spring.

Wow, that is a surprise, rhubarb up already that far north! I love rhubarb and your surprise pies sound interesting. Can you post the recipe? Enjoy your spring flavors!

Michele, I love Rhubarb crisp! Down here in Florida, we can purchase it fresh sometimes in the Spring when it become available up north. Rhubarb crisp was one of our favorite family desserts to make when my girls were little. Using Rhubarb in jam sounds yummy too. I bet it makes a pretty pink jam.

I love rhubarb! I tend to eat it plain but it's just as delicious in pies. Enjoy your rhubarb and spring. Can't wait tell our rhubarb comes in here!

Rhubarb surprise pie
1 cup flour 1 t baking powder 1/2 t salt 2 T butter 1 egg 2 T milk
mix flour, b.powder, and salt. cut in butter. add egg and milk and mix in. press into a greased pie pan. arrange 3 cup rhubarb on crust. sprinkle 1 pkg strawberry jello over rhubarb. (i have been using raspberry, very good too) combine 1/2 cup flour, 1/2 t cinnamon, 1 cup sugar and 1/4 cup melted butter. mix with a fork and sprinkle over rhubarb. bake 350* for 50 min or until rhubarb is tender. enjoy

I have a rhubarb recipe to share. These are wonderful:

Rhubarb Squares


Mix the following together and set aside for topping:

2 T butter, melted
½ c brown sugar
½ cup chopped walnuts
1 t cinnamon


Cream together the following:

1 ½ cup of brown sugar
½ cup canola oil
1 egg
1 cup sour cream

Then add:

½ t salt
1 t baking soda
2 cup flour
1 ½ cup rhubarb cut into ¼ to ½ inch pieces

Place dough into greased 13 x 9 inch pan, put topping on, and bake at 350 degrees for 40-50 minutes. Cut into squares and enjoy.
