I love a lot of things in life...two of which are soup and not wasting food. That being said I made the best soup today just by digging in my freezer. I freeze milk. When I get a new jug of milk I freeze a cup or two until I get about six stored up, that way if I run out and need a little it's there. Also, it's drives me crazy to pay for broccoli and cauliflower by the pound and then discard or compost all but the florets. So, I chop up the core and freeze it. Today I simmered a broccoli core seasoned with garlic, Mrs Dash, salt and pepper until very soft. I then used an immersion blend to liquefy the broccoli. Boil some potatoes with chopped onion, drain and mix them with the broccoli mush and add some milk to get you personal desired consistency. Heat and enjoy! Yum!!

Yes, that sounds delicious. I too freeze bits and pieces of left overs and recently made some individual shepherd's pie from left over shredded beef roast, corn, peas, and green beans. I add gravy and top with mashed potatoes and freeze them. I freeze my own beef stock from making crock pot beef roasts so it is easy to whip up some gravy. We are so busy working on the acreage that it comes in handy to be able to pull out from the freezer individual Shepherd's pies and bake one hour in the oven. (Portion control, made from scratch, with a variety of veggies and meats from what you have left over.) I have found a great instant dehydrated potato mix at Costco (the potatoes in it are from Idaho) called Honest Earth Mash Potatoes. 100% real potatoes and real food ingredients in it. They are better than my from scratch mashed potatoes. One could easily switch this recipe to leftover chicken and add leftover rice, noodles, broccoli, cauliflower, peas, etc. and top with a flaky crust or mashed potatoes. I grew up watching my dad make breakfast hash in a cast iron skillet from leftovers in the refrigerator after his night shift at the Los Angeles Times. Ha, he would crack a egg and place it on top of all kinds of left-over concoctions. Your frozen broccoli pieces would go great in a skillet egg dish too. Breakfast for dinner anyone? Oh yeah!

My dad would make leftover soup every week. It was sort of a family joke, we never knew what we'd get! It was mom's night off for cooking dinner, so she got a little time to herself and we had some very interesting dinners! I have to say, most of them were delicious. :D
