I'm making some applesauce -- usually I like to add some cinnamon, but thought about the new apple pie spice mix I just bought -- it has cinnamon, cassia bud powder, West indies nutmeg, and ground mace in it -- 2 tsp for a 9-inch pie. Could I use that to flavor the applesauce? Or is the nutmeg and mace too strong 'raw'?

I may wimp out and just use my Saigon cinnamon.

What do you add to your applesauce?

I think it would be fine...just start out slow and add more to taste. My family loves spices, so it would go over great here.

I bet it would be wonderful. I love the taste of nutmeg! I usually use cinnamon, a little nutmeg and a smidge of cloves..but the mix would be good too I bet.

I do exactly what Jenny does, but also add a smidge of allspice too!I would try a small batch and see how it tastes. Maybe just a cereal bowl full and season to taste to see if you like it before you season the whole batch. Never had cassia bud to my knowledge, atleast I am not aware of how it tastes! I notice my family seems to like stronger seasoning lately, even the baby!

Many years ago, we went to a little resort in the Ozarks with the kids. Meals were served family style and my step-daughter begged me to get the recipe for the "home-made applesauce." Finally, I cornered the cook and she replied, "Take a can of Mussleman's, add a little sugar and cinnamon and heat it through. Voila - homemade!" I never revealed the secret. ;-}

OK, I went with cinnamon, ginger, nutmeg, and cardamom. This is a combo I'd just made a 5-spice sugar with and it was so good in my tea that I thought it would be good in the applesauce as well. I skipped the sugar and added cinnamon and then small amounts of the other spices. It tastes great! Real test is tomorrow, when I'll serve it chilled with brown bread at the in-laws.

Oh, I love the spices at the holidays!

Katie,

My daughter only likes the crispiest apples, so I am forever make applesauce. I just peel, core and chuck the apples; put in a pot with a little apple juice (if I have any) or water and cook on low. I have used both pumpkin pie spice and cinnamon depending on what I feel like at the monent. My daughter likes the pumpkin pie spice better. She says it has a richer flavor.

Thanks, Jennifer -- That's how I make my applesauce, too -- just a bit of apple juice added, and cooked on low. No sugar added. I like the idea of using the pumpkin pie spice -- although I don't have a separate spice mix for that; I just use the spices listed on the Libby's pumpkin label! cinnamon, allspice, , nutmeg, and cloves, I think?

I'll make more soon -- everyone loved the homemade aplesauce today!
