Cristi- That sounds really good. I bet that would make really good taquitos.

Mary- Oh good! I am not a big fan of root beer but I like the idea of getting rid of the fat. Those crockpot liners will be awesome for me since I have been using mine so much lately.

CJ- I absolutely love garlic. It's one of my favorite things to cook with. I'm not a big fan of spicy but I will give that a try next time I go spicy.

I think we should share pictures! I would love to see some of your wonderful crockpot dishes. There is just something about seeing the food that makes it sound even better.

I did try a chicken and broccoli fettuccini in the crockpot over the weekend and it was the nastiest thing I have ever eaten. I don’t know what went wrong or if it was just a bad recipe but I will not be making that again.

To make life easy (so I have more time to sew)I spend a few hours each week getting other meals ready. I buy 2 big packages (not sure on size) of chicken breasts from Costco. Depending on the size, I cut some of the breasts in half to make them thinner for grilling. I cut some into strips for fajitas etc. The rest I dump in the crockpot and cover with water on low for 4-6 hrs. It shreds up in minutes. I then package everything in meal size vacuum bags. Generally all precooked chicken recipes call for 2 cups.
Then when I want to make chicken broccoli fettuccini or anything the chicken is ready to go and all I have to do is cook the noodles ;-)

I found this recipe somewhere on Facebook a couple of months ago. I have made it twice, shared it at work and given the recipe to many.
Southwest Crockpot Chicken
I used:
4 skinless, boneless chicken breasts-I cut them in half.
1 packet Hidden Valley Ranch Fiesta packet
1 can black beans (drained and rinsed)
1 can Rotel tomatoes with chiles (I used mild)
1 can corn (undrained)
1 8 oz block of cream cheese

I sprayed my crockpot with a baking spray.
Placed chicken in the bottom of the crockpot. Sprinkled the packet of ranch mix over the chicken. Poured the black beans, Rotel and corn over the chicken and ranch mix. I cut the cream cheese into cubes and placed on top. I did not mix. Cook on high for approximately 4 hours or 6 hours on low. I had more sauce than I used, so I would drain half of the liquid from the corn. When the chicken is done, I removed, mixed the rest together to a nice sauce, then spooned over the chicken.

It was amazing! My opinion.

Great thread!!! I love using the crockpot! I have several recipes that we've made many times that I can share!

I have not, however, tried any dessert recipes in one yet but I've pinned plenty! lol

Crockpot Beef and Mushrooms - This is a freezer crockpot meal but you could make it fresh, just would need less cooking time.

We LOVE this one! So good over mashed potatoes, rice, biscuits, you name it! And it is the easiest freezer meal to make since there is no cooking on freezing day. You could use your own DIY Cream of Mushroom soup if you make it - just mix it up and put in the bags on freezing day.

Italian Beef - This roast is very similar to the one mentioned earlier in this thread where you cook the roast with peppercinis. This is another really good recipe and the leftovers freeze great! We use it to make sandwiches often too!

Crockpot Bourbon Chicken - We enjoyed this one as well but I think that next time I would add a bag of mixed Asian style veg towards the end. I frozen the raw chicken in the marinade and then cooked in the crockpot and it turned out great. I just didn't add the green onions until day of cooking as they can taste funny after freezing.

OH! And this is my all time favorite go to for the crockpot!

Slow Cooker Mac and Cheese! Pasta goes in uncooked! Just stir it all up and plug it in! Add ham chunks to make it heartier! Or just enjoy the cheesy goodness!!!

• 1 (8-ounce) package shredded Italian three-cheese blend
• 1 (8-ounce) package shredded sharp Cheddar cheese
• 2 large eggs, lightly beaten
• 1 (12-ounce) can evaporated milk
• 1 1/2 cups milk
• 1 teaspoon salt
• 3/4 teaspoon dry mustard
• 1/4 teaspoon ground red pepper
• 1/2 teaspoon black pepper
• 8 ounces small shell pasta (about 2 1/4 cups), uncooked

1. Combine cheeses in a bowl; set aside.
2. Whisk together eggs and next 6 ingredients in a large bowl. Stir in pasta and 3 cups cheese mixture. Pour mixture into a lightly greased 3-quart slow cooker; sprinkle with 3/4 cup cheese mixture.
3. Cover and cook on LOW 4 hours. Sprinkle servings evenly with remaining cheese mixture.
4. No Precook: The best part of this simple recipe is that you don't have to precook the pasta!

Yum!! Thank you for sharing Jamie! That beef and mushroom recipe sounds so delicious. I really want to try it! All I'm missing is the onion mix. I can quickly run and get some. The Mac and cheese one sounds easy and so yummy. I love mustard in Mac and cheese.

I found another delicious recipe for the crockpot. It's sweet teriyaki chicken. It only needs 1 cup soy sauce, 1 cup sugar, 1 tsp garlic salt, 1/2 onion chopped, and 4-6 chicken breasts. You cook it on low for 7 to 8 hours. I served the chicken over rice and even poured some left over sauce on top. It's way good.

I do Salsa Chicken, which is a family favorite, although it grew out of desperation (most good things do). Just put your boneless, skinless chicken breasts in the crockpot and dump a big jar of Pace chunky salsa over it. Use plenty of salsa, because you want it to stay moist. Then let it cook on low if you have all day. Before serving, break up the chicken with two forks. You can serve it over noodles or rice if you want. Sometimes I serve it over bagged lettuce and top it with shredded cheese and tortilla chips -- kind of like a taco salad. The flavor of the chicken is really really good and it stays nice and moist. You can just serve the breasts whole with a couple of veggies on the side.

Marilyn, I have had salsa pulled pork before. My dad actually made some on Valentine’s Day. They use fresh salsa and it seems to work as well. I really like that this recipe can be switched up.

I love finding this thread. I use my croc pot frequently - chili, leg of lamb, pulled "lamb", cooking beans, soups, cooking up old hens so they're not so tough, rabbit, stews etc. I'm definitely going to check out some of these recipes and links. I like the idea of breakfast recipes.

I made another super delicious crockpot meal I wanted to share. Its called honey garlic chicken.
4 chicken thighs
4 garlic cloves
½ tsp. oregano
2 tbsp. parsley
1/3 cup honey
½ cup ketchup
½ cup soy sauce
Cook on low for 6-7 hours then top with ½ tbsp. toasted sesame seeds.

I found a new cookbook named 5 ingredients or less Dump meals by Cathy Mitchell and it has 100 crockpot recipes. It is really a great cookbook. Peachy Keen dessert
2 lbs peaches
1 1/3 c old fashioned oats
1 c sugar
1 c light brown sugar
2/3 c bisquick
2 teasp cinnamon
1/2 teasp nutmeg
mix cover cook 4-6 hours

Krista, I'm babysitting at my daughter's, but will share the recipe here when I get home. You'll love it. My mom is 100% Italian and thinks it makes a great lasagna, so it's "mama approved!" :)

Here's the crockpot lasagna recipe, as promised. Yummy!

Crock Pot Lasagna

1 Tbls. Olive Oil
2 Lb. Italian Sausage, Casings Removed
2 24-oz. Jars Tomato Sauce
2 Cups Water
Lb. Whole Milk Ricotta
2 Tbls. Chopped Fresh Parsley
Salt & Pepper
18 Lasagna Noodles (Not the No-Boil Kind)
1-1/2 Lb. Mozzarella, Grated
1 Oz. Parmesan, finely grated
Thinly Sliced Basil for Garnish

Cook sausage in olive oil, breaking up any large chunks, until browned, about 10-12 minutes. Add tomato sauce and water and bring to a simmer. Remove from heat. Stir together ricotta, parsley and salt & pepper to taste. Spread thin layer of sauce on bottom of slow cooker. Cover with single layer of uncooked noodles, breaking as needed to fit. Spread 1/3 of the ricotta mixture over noddles. Top with about 2 cups of sauce, then sprinkle with about 1 cup of mozzarella and ¼ cup of Parmesan. Repeat layering four more times. Cook about 4 hours on low, until noodles are tender and cooked through. Let rest 20 minutes before serving. Garnish with basil.

Since we are vegetarians, I usually use half and half veggie soy ground “beef” crumbles and veggie soy “sausage” in place of the Italian sausage, or sometimes a mixture of veggies, whatever is growing at the moment. I also usually use homemade tomato sauce instead of the jars. I made this for my niece's wedding party (they are vegans) using vegan cheeses, and it still tasted great. Although the recipe calls for Parmesan, in our family Locatelli is the go-to cheese instead of Parmesan. But either one works, as does Romano or any mixture. We've used this recipe over and over again, and it's always a hit. Enjoy (Mange!)
