I made pumpkin butter out of a pie pumpkin in the oven today. Since I don't have a recipe I made it up as I went along.

1: After halving & cleaning I roasted it at 425 for 1 hr with 1 cup vanilla bourbon, a little water, 1 cinnamon stick, 6 whole cloves, 6 whole all spice, 3 whole cardamom, and 1/4 tsp salt.

2: Scraped cooked pumpkin out of shell into sauce pan to finish on top of stove. Added 1 c water, 1/4 c organic maple syrup, 2 Tsp vanilla bourbon, 1/4 tsp pumpkin spice. Cooked & stirred until the consistency of apple butter.

3: After it cooled a little I strained it through a sieve. I'm happy with how it turned out. The hardest part was straining it.

yield: 3 12oz jars - did not can it, so it must be refrigerated.

Pumpkin Butter is delicious and I know you are going to enjoy your homemade delight! I love to put some on a baked sweet potato instead of butter.

Winnie, I've got sweet potatoes ~ I'll have to try it. I had it on toast for a lite supper last night.

Denise, I thought I knew all the towns between Ft Worth and Denton. I grew up in north Dallas.

Thanks Krista, it did turn out tasty.

Julie, I don't know why it wouldn't work with all the winter squashes and sweet potatoes too. My sister gave me a bag of sweet potatoes. She bought a bushel of them off a roadside truck. I gotta do something with them so may make a jar or two of sweet potato butter.
