Hi girls -
I like to make my own sausage, but have always made patties and canned them. I'd really like to make both hot italian sausage and breakfast sausage links. Will you please recommend the casings you like to use and where I can buy them? Also, any tips, tricks or suggestions in making links would be awesome!

Hi Sharon!
No, I didn't - not yet. I have been extremely busy and had to put the ground pork in the freezer for now. Hoping to get to it in a few weeks. Our "pig guy" told me where to get casings locally, and which types/sizes I will need for which sausages, so I need to get over there and buy them. He also gave me a few pointers as to how to do them. The plan is to make hot Italian, sweet Italian, maple breakfast links, and he told me I simply must make homemade hot dogs, so, I'm going to try. I'm not a fan of hot dogs AT ALL, but my guys love them, so I think it'd be nice to make them and know exactly what they're putting into their bodies! LOL! If those all do well, I might also make kielbasa or an apple-pork sausage. We'll see. I have plenty of ground pork, it's just mostly time that I need! :) I am really excited to get started, though! I'll keep you posted!
Have you ever made sausages? Any recipes, suggestions or tips???

Again Nini, sorry to reply so late!
We recently made:
~Kielbasa ~Brats ~Apple Maple Breakfast Sausage ~Smoked Tomato and Basil Sausage ~Christmas Sausage (this was an experiment and one we are definitely going to make more of! You MUST try this!)
Alsatian Christmas Sausage
Ground pork: 1 lb. Coarse salt: 1/2 tablespoon Ground ginger: 1/16 teaspoon Sugar: 1/4 teaspoon Ground cinnamon: 1/8 teaspoon Ground cloves: 1/8 teaspoon Ground black pepper: 1/4 teaspoon Ground nutmeg: 1/16 teaspoon
Adjust amounts of ingredients to whatever yield you might want. Mix all ingredients together and let sit overnight in the fridge to make sure that the flavors meld. Next day start stuffing :)
Something we did, which made it easier this time around was purchasing dishpans. We just got them at the dollar store but it made the whole process easier having multiple containers :)

This reminds me of making potato bologna with my grandfather. We would add ground potatoes, and then as much meat splitting 50/50 ground pork and ground hamburger. We would add onion, salt and pepper. Some of the extended family used other spices. We liked ours plain. We bought casings from the local grocery store and would pack the casings with a homemade casing stuffer my grandpa made. I still have the stuffer made from a metal pipe and cake decorating tool. He passed away in 1981. I want to do this with my grandsons so they can see the process. After they are stuff they can be boiled right a way or put in the freezer. We always served it with Heinz 57 sauce. I can't say I really thought it was the best food at Thanksgiving or Christmas, but it sure was tradition and I loved it. |
