Sara, a girls got to do what a girls got to do to get the job done. Got 7 quarts of beef stock canned up yesterday. Today I will can beef tips. My ma is going to come down and help. Won't take long to prep and get them in the canner. Clearing out the freezer ahead of butchering time. Nice to be prepared.

So, I ordered a steam canner. Did I need it? No. But I have been reading how you can water bath much quicker with much less water.
That's my story and I'm stickin to it. LOL
Any of you gals use one?
Michele, I need to do some beef stock also. I have some nice soup bones that should probably be used up.
So nice to spend a day with your ma.
Mine is gone, but I remember her coming to my house and we snapped beans for what seemed like forever while we watched tennis (her favorite, and my second, after figure skating). Good memories.

Lisa, I had a steam canner back in the day when all I did was jellies and pickles. I liked it and best I can remember I never had a lid not seal. It was over 30 years ago and I think they have been improved since then. As Michelle would say Happy Steam Canning!

Good luck with the steam canner Lisa. I never used one.
All 6 jars sealed of the beef tips. I wrote down how many steaks we used and to increase the gravy. I was hoping to get 8 jars, but that did not happen.

Heather, I can relate to your niece. When something should be crunchy it's hard to have it not be lol!

That is awesome Michele. Next year I would love to have a bigger crop of banana peppers. They are just so yummy.

Today will be canning pineapple day. I got 4 on sale for a dollar a piece, which I thought was a good deal. I plan on boiling the cores to make the water to go into the jars. Never done them before, usually they are too expensive.

Michelle, like you I have never canned pineapple so looking forward to hearing how yours turns out. Boiling the core for the juice is a great idea.

The pineapple turned out so pretty in the jars. I got 10 pints from 4 pineapples. One jar did not seal, so that is in the fridge to try. Other then a pain cutting up 4 pineapples, it was pretty easy. Success.

Michelle, chopping up anything is always the hardest thing for me. You must so proud of your pretty jars of pineapple.

I prepped yesterday to can ground beef today but I was awake most of the night so today I cooked the ground beef with all ingredients to have ready to can tomorrow. I always have a plan B in my hip pocket. lol Aldi had 4 lbs of grass fed 93/7 ground beef on sale so I couldn't resist it so that's why I'm in the process of canning ground beef. Had planned on getting back to canning dried beans.

Sara, I love Aldi. My go to store, if only it were closer (and unfortunately no delivery in my neck of the woods).
Still working through the tomatoes, some roasted and some chunked. The steam canner works well and does heat up so much faster. I read where some people use their pressure canners without the valve cover for the same thing.
Michele, I will keep my eye out for pineapple on sale. It is hubs favorite.

Lisa, my electric pressure canner also can be used as water bath canner with the regulator off. Glad you like your new toy.

Canned 5 pints of seasoned ground beef using recipe in my Ball Blue Book. The recipe only made 5 pints with 1/2 a cup leftover so I canned one pint of water so the jars wouldn't dance around while processing. Tomorrow I will have the leftover ground beef with macaroni.

Forgot to say they all sealed, doing the happy dance.

Anyway, I have done 14 quarts of chunked tomatoes and 5 pints of roasted in the steam canner, and they all sealed. So even though I didn't need the steam canner, it appears to be effective.

Good job on your tomatoes. You might not have needed it when you got it but you may find out with using it you needed it all along.

Great idea Lisa. You and Karen are keeping things pinging. Does the steam canner speed up the process? I did not need the electric pressure canner either, but it sure did free me up to do other things!

Anyone can collards? I'm thinking of freezing some in 1/2 pound batches. I dont buy greens in metal cans as the salt is too high.

Tara, I haven't canned collards but have dried collards, mustard & turnip greens, and kale to use in soup. I don't like dried greens as a side dish but they are fine in soup.

Not canning today but did enjoy the fruit of my labor for breakfast on my side porch. In the oven I cooked two eggs nestled in my pizza sauce and topped toast with my cherry preserves. Also had a small avocado. Annie enjoyed being outside in the front yard and made sure the street was safe. Didn't eat till after 9 so breakfast will be my big meal for the day.

Thank you Sara, for that information on collard greens. I don't think I will be looking for them anytime soon, lol.
I did try the pineapple I canned, very good even with out added sugar. If you can get them on sale they are well worth doing.
