Today will be more pizza and spaghetti sauce canning. The tomatoes ripened fast. Have to get out and check the garden as well.

I'm working on potatoes. Thanks for the advice on freezing them Michele! I tried some french fries and hashbrowns. They both worked great (hubby had to "try" them right away LOL!)

I am happy while canning Sara! Alot of work, but it sure is nice to see the canning shelves filling up. 11 and 1/2 pints canned and sealed yesterday. Got about three pints in the fridge, to add to the next batch. My canner was full.
It is great we can share food preservation ideas with each other.

Love canning the sauces. My daughters used to hate when I canned any type of tomato. They didn't like the smell and my one still won't cook anything like stewed because she doesn't like the smell of cooking tomatoes.

Krista you can also dehydrate your extra tomatoes and if you don't like them in pieces for soups and stews you can make them into a powder and add to soups and stews for flavor.

Canned 7 pints of chicken broth and one did not seal. At 15 minutes into the canning process E 50 showed up on the screen. E 50 means there was a process disruption. Have no idea what happened because lights didn't flicker. Had to restart the canning process after the canner cooled down and I re-tightened all the rings. Rings will loosen during the canning process.

I canned some roasted tomatoes yesterday. I only ended up with 2 pints, but I'm happy. And they smelled amazing yesterday when they were roasting. I will make more if my tomatoes go crazy again.

Sara not sure what would cause an error code. There must of been a slight spike or drop in electricity. Crazy thing. I usually tighten down the lids pretty good when pressure canning in the electric canner. Nice job Krista!!

I did 3 more pints of pickled beets yesterday. I only have about another batch left of beets in the garden. I am just waiting to see if they will get a little bigger before I pick them. I am so happy with how well my beets did this year.

Over the weekend we did 1 pint of tomatoes and 26 pints of beans. All sealed with the beautiful ping sound! :)

way to go Karen! I got the water bath canner out yesterday. Did up 14 jars of applesauce. Best part? All sealed. Today I will be making Maryjanes Apple Pie Filling. I am using cortland, and honey crisp apples. Then I will freeze a few gallon bags of sliced apples for Danish apple bars. Got to process while they are ready!!

7 jars of apple pie filling. 2 did not seal. Oh well 5 did and that is good enough. the two will go in the fridge to be made into pie. I always struggle with pie filling sealing.

Michelle, I've had problems with apple pie filling not sealing too. Sometimes I think no matter how hard I try to fill the jars just right if I get a smidgen more in the jars the filling migrates to the jar rim during the canning process. That's just one of the many theories I have on why my lids don't seal.

Final apple canning was 5 jars of brandied apple rings, or in my case slices. My apples were to big. Seen this recipe in the canning book and thought why not. I wanted to do red hot slices, but did not have red hots. I have one jar that did not seal, so will give it a try in a few days. I am trying to give away the rest of the apples on the honey crisp tree. will see how many are left after the weekend and maybe press them. So might not be final apple canning, lol. Karen, will get you that recipe.

It all sounds so good, Girls! I have enjoyed the canning that I did this year and plan to do more. It is so rewarding to be able to feed my family with home canned and home baked goodies!
