Thank you, Girls, for all of the kind words! I am 71 and learned to can in my younger years from my Mother-in-law. We were renting a small house that had a peach tree in the backyard. I am so glad that I learned such a valuable skill from her. Now my husband and my GrandGirls are learning from me. Having a great time in Southern California!

Yesterday I dehydrated the tomato skins that were left over from the sauce that I canned. My husband was so happy to help me with those! He loves to put them on our morning eggs! We have put them on breakfast sandwiches, too! So good!

Nancy, you have been busy! I love all of the tomato products as well. I do the skins too, but mainly use them as a thickener. Last night I did some air fried chicken tenders, pulled out a jar of tomato jam from last year, mixed it with a little mayo (Dukes of course!), and a dash of Sriracha for a nice dipping sauce.
I am helping a friend that is on vacation with watering her garden and came home with some huge zucchini. I will make zucchini relish and am considering the mock apple pie filling.

Nancy, I dry tomato skins and put them through the blender to make tomato powder. Like Lisa I use it as a thicker and also to add more tomato flavor.

Lisa, zucchini relish is very good. Happy canning.

Today I made 3 jars of raspberry jam. This was the perfect way to use up the last of my raspberries. My plants are practically done producing now.

Got the steam juicer pot out today. I have a pot of crab apples juicing to can for pectin. I use that for all my jam and jelly making, and works great. The apples are almost ripe, so they should be perfect for gelling.

Michelle, glad to see you are busy in your kitchen, my kitchen is on hold till MS fatigue lifts off me. Homemade pectin from crab apples must me great to have on hand. What size jars do you use? As you would say "happy canning".

Your jam looks wonderful Krista!

Michele - I've never made pectin before. That seems like a great idea! Especially since the prices of everything keep going up.

Sara - I hope your fatigue lifts soon!

It's green bean canning time here :) 12 pints last Monday and another 10 yesterday. Lots of green tomatoes but they're just not turning red. Hopefully soon. The potatoes are about ready to be dug up too.

Heather your garden is doing great. I have made pectin for quite a few years now. It is just crab apple juice. It is tasteless in jams and jellies, I think, and you control how much sugar you use. I add sugar to taste.

Sara get feeling better soon!! In the past I have done pint jars. This year I made half pints. I did get 8 half pints and 1 pint yesterday.
I am not too busy with the garden stuff yet. Waiting on the carrots to get just a little bigger. I want to can some whole. Never done that before. I thought putting them in pints would work and thin them out in the process. So hoping I can catch enough of them at the right size. I had to replant string beans, so they are blooming right now, and tomatoes are green and small yet. My potatoes are starting to die back.

Michelle, I think it's very smart of you to can the carrots you thinned from your garden. Makes a lot of sense to me.

To make a long story short today I am cooking spaghetti sauce to can tomorrow. One of my sisters who lives in Paris has moved back to Mass to be with her daughters. Before she left, she gave me 30 cans of assorted diced tomatoes. This morning, I put 11 cans through the food processor and one can left whole for texture. Added Italian herbs, garlic, green onions, Merlot, red wine vinegar, EVOO, and sugar. After the sauce has cooked down, I will put it in the fridge to can tomorrow.

Yes, Lisa I will miss my sister but it's good for her to be with her daughters and grandchildren.

If you are preferring to Merlot, I have a glass or two most days.

While I was processing the tomatoes in my food processor, I was thinking I only have to wash it once for 7 pints of sauce.

Oh Sara! You sound like me with the clean up! I lose patience for things like cleaning lately.
As far as partaking, I hope you had a bit of Merlot, a bit of that tasty sauce, and HOPEFULLY, some black cherry ice cream. LOLOLOL

Canned up some blueberries for the first time. I did 11 jelly jars, and 1 pint. I am thinking I should of just done pints, as there is not much for blueberries in the jelly jars. Thought I would try something different, so will see. All sealed too.

Thanks Sara. Yesterday I canned a few string beans, carrots and 2 quarts of pickles. The garden is starting to produce. Today I will go out and pick more basil leaves, the plants are really growing.

Michelle, I remember back when I had a large garden, and it was just beginning to make or at the end of harvest I would gather a little of this and that to make mix-veg pickles. The mix was never the same but always good.

Now when I have a little of several herbs, I make what I like to call Herbs de Texas, a take on Herbs de Provence.

Sara, I would probably like Herbs de Texas better. Most Herbs de Provence have too much lavender for my liking. I enjoy the scent of lavender but am not a huge fam of the taste.
I love giardiniera, so I'm sure I would enjoy mix-veg pickles. With some Merlot and black cherry ice cream. Sorry, I couldn't resist. LOL

I've never heard of herbs de provence with lavender. I made mine with thyme, basil, rosemary, tarragon, savory, marjoram, oregano, and bay leaf. I wouldn't like it with lavender either -- great to smell but not to eat. I have heard of people using it in muffins and tea though.
