All jars of the ground beef sealed!!!!!!!!!! First time they all sealed with the electric pressure canner. Guess I am finally getting the hang of how to use it. lol

Found organic black-eyed peas on Amazon today so ordered 2 lbs. On the pkg they were also called cowpeas. I have heard that's what they're called in the northern and eastern states. First time I have seen cowpeas on the pkg. Also ordered a South American red bean and pigeon peas. I have heard of pigeon peas but have never had them.

Yay, Sara!! Sealed jar in round one is wonderful!! My hubby is a bit skeptical about canning meats. Hopefully one day he will give it a try. Currently we just freeze it. :)

Karen, I am very careful when canning meats. I have thrown out jars of canned meat after a couple of months on the shelve even though the seal was good, but the meat had changed color. When it comes to canning, I always err on the side of safety and common sense.

Lisa, that was when I was canning in my Yellow Rose Cottage on a hot plate. Now that I can in my kitchen with the electric pressure canner, I feel more confident it's done right.

The electric canner does make things easier, for sure. I water bath or pressure can in mine.

My sister dropped by two rump roast she got for me that was on sale for buy one get one for a penny. I hope to prep the meat and veggies tomorrow to can beef stew on Saturday. Thanks, Michelle, for the recipe.

All jars of beef stew sealed but I was a bit disappointed with how they looked. I used the raw packed method, so the jars were so pretty layered with the different colored veggies with the beef on top when I packed the jars. When I took the jars out of the canner well, they all looked like stew - brown on brown. I guess stew is pretty in its own right, but layered veggies are in a class of their own.

Sara, I put the beef on the bottom when I canned it. Wonder if that would of helped with the coloring?? I hope it tastes good.

You could try browning the meat also. Some say brown, some say raw. It is an extra step for sure.

Forgot to mention, that we had canned turkey carcass soup last night. It was very good. I did add some rice and spices to it, as I had canned it without. I am enjoying the jarred meals for sure.

Michelle, you inspire me to put up more jarred meals.

In yesterday's afternoon sunlight I could see the orange carrots and green bay leaf in the beef stew. I guess everything looks better in sunlight.

Prepping today to put up oxtail soup tomorrow. I couldn't find a recipe for canning oxtail soup either in my canning books or on-line. So, I will make oxtail broth and add the veggies when done. Will follow the canning instructions for beef veg soup.

Sara your just using the oxtail for the broth, so it would be the same as any beef soup, in my opinion. I started working on potatoes last night. I froze up a bunch of jo jo's. I put a pan of potatoes in the oven yesterday morning before work, and my husband took them out then. They were ready to cut into jo jo's last night. I should do some more potatoes today to make hashbrowns for the freezer. Or do french fries. I will do another batch or to of canned chunks I think as well.

Jo Jo's are, depending on the size, potatoes cut into fourths. Then put a little oil on them and roll them in a mix of panko and parmesan cheese and spices. Then bake them. Pre cook the taters till almost done first. You coat them in the panko mix and then freeze on a cookie sheet. This morning I will get them into freezer bags. Got hashbrowns made up last night. French fries are next. I save enough potatoes to plant this spring, and a few more pounds to use. But they are starting to sprout. I won't have to plant as much this year. My husband helped me last year and he thought we needed a couple extra rows.........lol.

Michelle, they sound tasty. Will have to give them a try.

Yesterday I put up seven 24oz jars of ox-tail soup. I used the raw pack method because I wanted to make sure I got equal amounts of all the veggies. Also, the raw pack method cuts out a step for me and dealing with MS fatigue that's a great help. 6 jars sealed and one didn't. Guess what I am having for lunch today.

I've been channeling my inner Sara and canned dried beans, plus a couple of quarts of leftover chili to fill up canner.
I love raw pack, so much easier.
Michele those potatoes sound delicious. This past summer when I went to northern Ohio for a dog show, I stopped at a hole in the wall and had chicken wings. They had many choices for wing sauce, and I chose parmesan garlic. I thought they would be using garlic powder, but they actually used crushed cloves and shredded parm. They were the best I'd ever had. I warned Sherman's handler that I may reek of garlic the next day at the show. LOL Since then, I've used that combo on ribs, potatoes etc. So good

Sara that jojo recipe came off of pinterest. Did you make up the beef stock first for your soup? Lisa those hole in the wall places are the best.
