I canned 7 pints of dried beans today. Five pints of Whipple heirloom beans and 2 pints of baby lima beans. The Whipple bean is a red bean from Mexico with a thin skin and when cooked is similar to pintos. This bean is now one of my favorite beans.

As far as I know beans fall into these 3 families of beans: pinto; black; lima. Lentils are in a separate group.

Great job on getting the canner going Sara. 3 families of beans, who knew! I organized my canning shelf a bit more yesterday. Got everything on it now. Took my cow stuff off, to make more room. Last night we had t bones on the grill, canned potatoes, carrots, cranberry sauce, homemade butter, and a pie made from a MJF recipe of canned pie filling. Enjoying all our hard canning work. And a pretty easy meal to boot.

Oh, Sara! My heart is so sad for you! I am at a place where I am wishing for a Yellow Rose Cottage to escape to. Having already enjoyed one for ten years, it must truly break your heart to concede defeat. My sincere condolences for your adjustment.
But at the same time, a cheer of “Strength, dear sister!” I’m proud of your acceptance and determination to carry on in a different manner. We shall all continue to enjoy your occasional adventures into canning!

Thanks Sara, for your sweet words and understanding. Canning in my kitchen does have its upside. It's cold and damp today and I am canning King City Pinks beans and black-eyed peas. Hope you get your cottage. They are special places to hangout.

Last week Aldi had 10lb bag of rustic potatoes on sale, so I put up 7 pints of potatoes. My favorite way to use can potatoes is home fries.

My sister gave me a hambone, so I made hambone stock and will pressure can it after I finish my morning tea. Hambone stock is good in bean soup, dried beans, and veggies like cabbage.

Can on girl, can on. lol I like the idea of hambone stock. I never did that. I did cook down my turkey carcass. I made 5 quarts of soup and 4 quarts of stock. I had been reading that some herbs turn bitter when canned. I am not sure on that one, but I did leave out herbs and spices. They will be added in along with rice, or dumplings, or noodles when we go to eat the soup.

Michelle, you did a good job with that turkey carcass. When I first started canning, I used to put herbs in my stocks/broths but then I realized I may not want that particular herb in a dish. For my hambone stock I used two stalks of celery, one yellow onion, and 3 small garlic cloves. No salt because the ham on the bone was salty enough.

Thanks Sara for the stock recipe. I think I threw out a few ham bones, that I had in the freezer. I never got around to using them and needed the room. Of course now I want them. lol that is the way it always goes.

I've been wanting to learn to can. I actually bought myself a pressure canner and jars last year, but haven't tried yet. My mother intimidated me, well, actually scared the daylights out of me when I was little. She used to can all the time, still does, but she told me to stay out of the kitchen when she was canning, she didn't want it to blow up. WHAT!!?? Scared the you know what out of me so I've not yet tried. Had a brand new canner for years, never opened it, sold it at one of my garage sales about 10 years ago for $20. LOL! What a deal someone got. Crazy how a child hood scare and stick with someone one all these years later. I intend to crack out my canning cookbook and read up on it to try and get comforable with it this winter. We have a costco and winco nearby, so I'm sure I can find someTHING in bulk and give it shot. Love the potatoe idea, Sara.

April start with something easy. Waterbath is usually the first thing people do. Pressure canning, read your canner book. Learn the steps. Once you got it going, do not leave the kitchen, or be distracted by anything else. You will want to check your canner pressure, if it has a dial, every few min. Adjust if needed. Use the tool correctly and there is nothing to be scared of. Good luck.

Thank you, Michele, I appreciate you sharing information. My mother gave me her waterbath canner a couple years ago, I have it stored in our garage on one of our shelves, I can always dig that out to start as well. I will definately read up on both methods before I make any attempts. Time to put those big girl panties on and venture into something new!

I'm prepping today to pressure can ground beef tomorrow. I'm using the seasoned ground beef recipe in my Ball Blue Book. It calls for 2 cups tomato juice which I don't keep in my pantry, so I mixed bottled water with a 6oz can of tomato paste. The tomato juice may be a little too thick to drink but it should be perfect for canning.

Aldi had 4 lbs of 85-15 grass-fed ground beef on sale. I have canned it before when on sale, so I know it won't be too fatty. The recipe will make 5 pints so I will fill my electric pressure canner with 2 pints of red beans. The canning time works for the beans and ground beef.

It is nice to have the canned hamburger, for a quick meal. And filling the canner with beans is a good idea. lol Hope everything sealed.

Would one of you girls please send me instructions for canning pumpkin/winter squash? I doubt it has to be cooked until soft before pressure canning for 65 minutes!?

Sara, I successfully pressured canned pumpkin last year. It can be done if the pumpkin or winter squash is cut into chunks and not pureed. Pureeing is no longer considered a safe way to can them.

tonight we cracked the lids on two pint jars of round steak, potatoes and carrots. Added some herbs and seasonings along with some corn starch to thicken up the liquid. Oh my that was good. So tender too. A perfect quick meal to have on the canning shelves.

I have 7 pints of beans in my electric pressure canner - 3 red and 4 great northern. Tomorrow, I hope to put up bison chili with pinto beans.

You can use any cuts of meat when canning the meals in a jar. Roasts would work too. I wanted to try round steak because they are a tougher cut. Michelle, Dec was not a good month for me. Sorry I am just now getting back to you to thank you for the beef stew recipe. I printed it out for my sister too.

Today I am prepping to put up 4 lbs of organic grass-fed ground beef tomorrow. I buy it when Aldi has it on sale. Prep one day - can the next day - that's how I get it done.

Yesterday I had black-eyed peas that I put up last fall. It needed more liquid, so I added a pint of the ham-bone broth I put up last month. Made for an easy traditional southern & Texas New Year's meal. Gotta have my black-eyed peas on New Year's Day to ensure I have a lucky and prosperous year.
