I just got done canning 10 quarts of Black Beans and Sausage Soup.

I agree with you, Michele, the leave are turning such beautiful colors!

You ladies have been busy. Beans and soup, you should be ready for winter. Sara I hope you can find beans else where if you need them. No canning for me, till the wood pile is done. After 3 days I am tired. We still have a bunch to split and pick up.

We will soon be working on getting the woodshed full for this winter. We aren't as far north so time to get things done lasts a bit longer here.

I found Goya cannellini beans on Amazon so that's what I'm canning this morning. When it gets colder I think I'll make a small pot of minestrone soup with a pint of the beans.

Michelle, potato soup is one of my all time favorites.

My sister Betty lives in the next county over from me in a little town on a farm. The other day her nephew by marriage told her about the Farm to Table project. The federal government buys food from the farmers and dairies to give to the people because of the virus. Young men from the local Baptist Church drove a hundred miles to pickup 1500 boxes of food to give out in their town. Around five that night he called Betty to make sure she had gotten her box and she said no. He came to take her to the church and the men loaded 4 boxes into his truck. It was at the end of the give away time and boxes were left so she got extra.

Now to what that has to do with me. Betty gave me 5 lbs of new potatoes that I hope to put up this coming week. One funny thing I just have to tell y'all. Betty was already in her nightgown when he called and he told her to put on her robe and come as she was because she would not be getting out of his truck. So being the farmgirl at heart that she is Betty went in her gown-tail. Old folks used to say gown-tail all the time when I was growing up and I catch myself saying it from time to time.

Wooo Hoo way to go Betty. lol I have done alot of things in my gown-tail. Go out to check cows in the middle of the night, is just one of them. How nice that you both received lots of fresh goodies. Enjoy, cause I know they will not go to waste at your house Sara.

Michelle, I can see you checking on your cows in your gown-tail, boots, and heavy jacket when snow is on the ground.

I put up 4 pints of potatoes yesterday and Betty said she had more potatoes if I wanted them so I will put up 4 more pints and share with Betty's twin, Bobbie, who still works so doesn't can anymore. Today is housecleaning day so hope to get back to canning tomorrow.

Aldi had ground bison today so I ordered 4 lbs and it was delivered this morning. I saute it and then cooked the veggies with spices, herbs, crushed tomatoes, and cold brew coffee. The chili turned out very good, and I hope to can it in the morning if there's any left because I keep dipping into it for just one more little bowl.

Scuppernong Grape Jelly. They don't grow where I live but I brought some home on a recent business trip. Ran out of scuppernong's and used some muscadine. I'm amazed at how purple this is with so few muscadines.

Hello ladies! SO excited to see how busy everyone has been canning! Sara - I thought I was done canning today, but I saw you canned potatoes and OHMYGOSH am I so glad you shared that! I have two big bags from the farm that need processing soon! YIKES! And that made me think what else I have forgotten... the bourbon pecan pie filling I wanted to make for Thanksgiving and Christmas gifts! And the hummus in a jar! YIKES! So this week I am going to have to pull out the ol' pressure canner one last time before 2021... Can I tell you a secret, though? I'm kind of happy about that. I love canning... It's my therapy! LOL!

SO, this is why I've disappeared this past month... I've canned zucchini pineapple chunks and shreds, cherry pie filling, blueberry pie filling, pickled peppers, zucchini relish, maple beans, corned beef, beef stew, chicken, chicken stock, chicken soup, more citrus tea, meatballs, stew beef, ground beef, beef roast, pork roast, ground sausage (for pizza topping!), breakfast sausage links, apple sauce, tomato sauce, mushrooms, kidney beans... There's more, but I can't think of everything off the top of my head... These are just the jars I haven't put away in the pantry yet - I'll be taking care of that today!

I was so upset because I made a TON of pumpkin butter, thinking I could can it... but it's not an approved product for canning. I just don't understand why it can't be canned. Mine is not super thick. I am sure the heat would permeate the jar and bring it to the proper temperature. Nevertheless, I'm not going to take the risk. I had to use it up within two weeks, which was a bummer (there was a LOT of pumpkin butter); but that only caused me to try new things like a savory pumpkin butter tart and an incredibly delicious pumpkin butter bread. We also gave some away as fall treats. Every drop was thoroughly enjoyed!

I still have apples and pumpkins and lots of butternut squashes to can, but I love letting them deck my halls until Christmastime. We didn't get a lot of apples this year - I am so, so disappointed! The weather adversely affected the crops, and apple picking season was curbed short as a result! I MISSED it! UGH!!! Thankfully I did make applesauce, and I still have enough to make Thanksgiving pies.

I think I'm going to wait to January when it's really chilly out to can my Grandma's pot roast and French vegetable soup. My girlfriend gave me a whole bunch of beans that her mother never used, so I told her whenever she is ready we will get together and we'll can them up together. We'll be making more maple beans (She loves them! She ate the whole jar I gave her by herself in one sitting! LOL!) and bean soup and canning just plain beans for use later. I don't think we will get to them before Thanksgiving, but soon. Very soon.

wow everyone has been busy as usual. Always fun to hear what everyone has been doing. Nini, there is a rebel canner group,on facebook, they can everything and anything. You can can apple butter so why not pumpkin. I have been busy cleaning up before winter. Getting the yard work done now. Got today and tomorrow left to finish. I will be canning chicken possibly this weekend. If the old hens get done. I have been waiting to get enough jars empty to do them and some cranberries. Should pick up another case I guess, if I can. HAPPY CANNING.

Nini I'm amazed at how much you put up and more to come.

Michelle, my sister cans chicken for casseroles and soup.

My canning took a backseat to MS fatigue, but it has passed, so it's 4 pints cranberry beans this morning. Tomorrow 2 pints cranberry and 2 pints cannellini beans.

Everysense Nini said she canned hominy I have wanted to give it a try. I have a 1 lb bag of dried hominy and watched a how to-do video on u-tube so it's on the list to do.

I also watched a video on dry canning crackers. I can see canning crackers if they are loose in a box but if sealed in sleeves of waxed paper why? She took the crackers out of their sealed sleeves. Made no sense to me. Am I missing something? She did do a disclaimer on it's not recommended to do dry canning in the oven.

Last week I canned 4 pints chicken broth with fresh rosemary.

Yesterday was a canning day. 12 quarts of chicken. Glad that job is done. Had 1 quart that did not seal. I can see the advantage of having 2 pressure canners. I plan to borrow my sons next time I do beans, or meats. 3 batches at 1.5 hours each of sitting in the kitchen and watching the canner drags out the afternoon. haha

Michelle, I can only imagine having so much to can I would need 2 pressure canners. Happy canning.

Yesterday I put up 4 pints hominy - this morning it's another 4 pints.

Prepping 6 small pie pumpkins and one sorta large one to can this week. The large one I dropped on freezer paper on my driveway to break it open. Got the idea from Lisa "nubidane". Thanks Lisa that's the most fun I have ever had breaking down pumpkins.

Lisa, I can in chunks. Following Jackie Clay's recipe. Thanks for telling me about her canning book. Next year if I can pumpkins again I'll use large ones. The small ones are a lot of work with little meat.

Kathy I would think all pumpkins are edible. Some may be better than others. Give it a try and let us know how it turns out.

My sister cooks stew, chili, or taco meat in an cleaned out whole pumpkin.

oh my gosh, I am picturing everyone out dropping their pumpkins on the driveway. lol I think your pie pumpkins are sweeter for making pies and etc. with. tonight, I tried cranberry juice a different way. Cooking the berries, then straining them out. Had my husband do a taste test, comparing the cooked to the easy version of putting a cup of berries in a jar, adding sugar and boiling water, then canning. The winner is the easy version!!! So that is what I will be canning this weekend. I did buy another flat of quart jars last weekend.

This weekend I finally got around to canning applesauce with apples from my tree. It’s a young tree so not terribly prolific yet but I managed to get one batch of jars plus enough apples left over to make an apple pie for thanksgiving. I tried adding nutmeg and cloves this time and it turned out really nice. I’m awed and inspired by all the different things you ladies are canning.
